The GPS function on most newer smart phones remains on even in Airplane Mode. As long as the phone is able to "see" the satellites its GPS can function. And many phones will store the last map generated while you were still connected to a cell tower or wifi in its cache and use that to show your tracking. The big hurdle is actually being able to "see" the satellites while in the airplane. Sitting by a window will often make it work.
