That's how the vast majority of Retail Leasing works. Fixed Rent + % of Gross Sales
(not "profit").
Big Al's has significantly more reviews than Cal's and his overall rating on Google is the same or higher than Cal's.
(I've never been to Big Al's, but I'm going to try it out.)
