Where I think there's room for improvement:
If anyone is looking for a place to cut back, there's no need to have both stuffing and bread at the same meal. And no need to have both sweet potatoes and mashed (white) potatoes with gravy. Green beans could replace corn. And it's always good to have a big salad.
I once went to a Thanksgiving dinner where the hosts put the above ideas into practice. All the guests appreciated it (for health reasons) and the hosts didn't have to work as hard to get the meal ready. There was stuffing, sweet potatoes, Italian green beans, a big salad and perhaps one or two other low calorie items. Pie and coffee was served about one hour later. It was very enjoyable and not gut-busting. (This year I'll skip the coffee and just have some fruit for dessert.)
