My question-- how do we handle the gratuities? What amount (%) is appropriate for a NYC to FL move? Are there different crews? Should you tip both at pick-up and delivery? Would appreciate any advice that you may have.

Have you used movers before? We have moved a gazillion times down through the years and have never heard of tipping the movers. Usually what we do is lay in a lot of cold Mountain Dews (seems to be the drink of choice) and some subs. They might drink some of the pop (soda to you!) while loading/unloading and take the subs with them. It always seems to be greatly appreciated. We might send them off with a stealth case of beer. (I will deny saying that...)
