As a former server at one of the country clubs here, the problem with seating groups as they dribble in is that it nobody remains in their initial seats. Drink orders are taken, some may also place food orders, others may want to wait till their friends arrive, and it is near impossible to get everything right on the bill because all the golfers are changing seats to catch up with their buddies. If you wait till everyone arrives and are seated all at once, there is very little movement among the guests in changing seats, everyone gets served at once, and the checks are correct.
I have served golfing parties, and have been "left" with the check, as guests have slithered out the door, and there was no way of keeping track of who was where.
