Inulin is a natural vegetable fiber, as Dr. WOB says. wikepedia has a nice, hopefully accurate article on the benefits. Like psyllium aka Metamucil, it is not digestible, but give a starchy sweetness to food.
I'm all in for inulin and apologize for dissing it earlier. It is a polymer, but a natural and apparently safe one. Next time I make pasta for a crowd I'll use it.
