I normally squeeze a lemon or two, add some good quality olive oil, salt & pepper, and have a nice homemade vinaigrette. Yesterday Mr.and Mrs. Buggyone graciously gave me some of the key lime and Meyer lemon juices from their own trees.
I have BIG plans for the key lime juice, so in the meantime I defrosted the lemon juice to make some of the vinaigrette. Of course I took a taste of the lemon juice, and HOLY COW! Is it ever good. Lemony but not so tart it burns your throat, and the best lemon flavor I've ever tasted.
So thank you, Richard and Diane, for your gift. Here's the salad I made--several lettuces, toasted pine nuts, kalamata olives, grape tomatoes, fresh-shredded parm-romano mix, ground pepper. I should have added some thinly shaved onion but forgot. Oh, and some chicken, 'cause it was my dinner.
