Italian Orange Salad
Sweet oranges or tangerines, onions, salty olives and black pepper combine in a traditional Italian Orange Salad for Christmas Eve or any holiday dinner. Perfect for Easter brunch as well.

Living in Florida, this could be served anytime at all with the abundance of oranges available.

Ingredients

6 round slices of mandarins or large round slices of orange (or use any combination of oranges, blood oranges or tangerines)

3 thinly shaved slices of red onion, then cut into quarters, like half moons.

12 Kalamata olives, pitted and halved

Olive oil to "drizzle"

Grinding of fresh black pepper

Instructions
Peel and slice tangerines crosswise, and lay the slices overlapping slightly on a plate or platter.

Top with red onion and olive halves.

This can be very attractively arranged on pretty platter......

Drizzle with olive oil and grind some fresh black pepper over all.

Serves 4.

Increase ingredients for larger crowd.

You may prepare the salad several hours ahead of time, cover with Saran wrap and leave on the counter at room temperature until serving time.

It may sound like a "strange combination" but is very tasty and easy appetizer for buffet table.
