Your favorite brunch/breakfast casserole with me? A bunch of girls are coming to our house for brunch on Thursday and I would like something even better than my go-to recipes of bread/sausage/eggs/ onion or Hashbrowns/ mushroom soup/ mushrooms/ ham eggs. I have misplaced my recipe for French Toast Casserole that tasted like the most delish bread pudding you have ever tasted.
If you have a yummy brunch addition, I would be so grateful.

Stuffed French Toast
8 - 12 slices bread - cinnamon swirl adds an extra kick beyond white bread
1 doz eggs
8oz cream cheese block - cubed [I prefer to use 10oz to insure coverage]
2 cups milk or comb of milk and half and half
1 tsp vanilla
seasonal fruits - about 2 cups [strawberries sliced if using them]
Bread can be cubed to made the dish like a bread pudding or can be left in slices with crust or without crust - have done both - prefer that latter method 'cause I can then remove from baking dish and cut into triangle servings to arrange on platter with any extra fruit I didn't use in stuffing.
1. Pre-heat oven to 375 degrees
2. Mix eggs, milk, vanilla and pour 12 of mixture into a butter coated 9x13 baking dish
3. Layer half of bread in mixture; turning to coat both sides
4. Distribute fruit and cubed cream cheese atop bread
5. Soak remaining slices of bread in egg mixture and layer atop fruit/cheese
Pour any remaining egg mixture over the casserole
6. Bake 30 - 35 mins til golden brown
7 Layer Salad
6 cups chopped romaine lettuce
4 cups seeded chopped tomatoes
4 cups seeded chopped cucumber
1 (16-ounce) package frozen baby peas, thawed
1/2 cup sliced green onion
2 cups sliced radishes
2 cups sour cream
1 cup mayonnaise
1/4 cup fresh lemon juice
2 teaspoons salt
1 1/2 cups shredded sharp Cheddar cheese
6 slices bacon, cooked crisp and crumbled
1. In a large trifle dish or clear deep bowl, layer lettuce, tomatoes, and cucumber.
2. In a medium bowl, combine peas and green onion, and layer on top of cucumber. Layer radishes over pea mixture.
3. In a medium bowl, combine sour cream, mayonnaise, lemon juice, and salt, stirring until smooth. Spread evenly over radish layer, sealing edges. Top with cheese and bacon.
4. Cover tightly with plastic wrap, and refrigerate for at least 8 hours or up to 24 hours. Let stand at room temperature for 15 minutes before serving.

Cranberry Orange Scones. They always disappear quickly. Serve with coddled cream and a good jam or marmalade. I always do them for Holiday breakfasts
Cranberry Orange Scones
14 to 16 scones
Ingredients
4 cups plus 1/4 cup all-purpose flour
1/4 cup sugar, plus additional for sprinkling
2 tablespoons baking powder
2 teaspoons kosher salt
1 tablespoon grated orange zest
3/4 pound cold unsalted butter, diced
4 extra-large eggs, lightly beaten
1 cup cold heavy cream
1 cup dried cranberries
1 egg beaten with 2 tablespoons water or milk, for egg wash
1/2 cup confectioners' sugar, plus 2 tablespoons
4 teaspoons freshly squeezed orange juice
Directions
Preheat the oven to 400 degrees F.
In the bowl of an electric mixer fitted with a paddle attachment, mix 4 cups of flour, 1/4 cup sugar, the baking powder, salt and orange zest. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the eggs and heavy cream and, with the mixer on low speed, slowly pour into the flour and butter mixture. Mix until just blended. The dough will look lumpy! Combine the dried cranberries and 1/4 cup of flour, add to the dough, and mix on low speed until blended.
Dump the dough onto a well-floured surface and knead it into a ball. Flour your hands and a rolling pin and roll the dough 3/4-inch thick. You should see small bits of butter in the dough. Keep moving the dough on the floured board so it doesn't stick. Flour a 3-inch round plain or fluted cutter and cut circles of dough. Place the scones on a baking pan lined with parchment paper. Collect the scraps neatly, roll them out, and cut more circles.
Brush the tops of the scones with egg wash, sprinkle with sugar, and bake for 20 to 25 minutes, until the tops are browned and the insides are fully baked. The scones will be firm to the touch. Allow the scones to cool for 15 minutes and then whisk together the confectioners' sugar and orange juice, and drizzle over the scones.

Hi Gracie: Had this at a friend's house and asked for the recipe. It was a good one.
Egg Casserole from Robert Irvine Food Network
Ingredients
Butter, for baking dish
1 pound Italian sweet sausage, casings removed
1/2 cup chopped shallots
2 garlic cloves, minced
1/2 cup chopped drained oil-packed sun-dried tomatoes
4 tablespoons chopped fresh parsley leaves
5 large eggs
3 large egg yolks
1 cup half-and-half
1 cup whipping cream
2 cups grated mozzarella cheese
1/2 teaspoon kosher salt
Directions
Preheat oven to 375 degrees F. Butter 13 by 9 by 2-inch glass baking dish.
Saute sausage in medium nonstick skillet over medium heat until brown and cooked through, breaking up with back of fork into small pieces, about 10 minutes. Add shallots and garlic and saute 3 minutes. Add sun-dried tomatoes and 2 tablespoons parsley; stir 1 minute. Spread sausage mixture into the prepared dish. (Can be made 1 day ahead, covered and refrigerated.) Whisk eggs, egg yolks, half-and-half, whipping cream, 1 1/2 cups cheese, and salt in large bowl and blend well. Pour egg mixture over sausage mixture in the baking dish. Sprinkle with remaining 1/2-cup cheese and 2 tablespoons parsley. Bake until top of the casserole is golden brown and knife inserted into center comes out clean, about 30 minutes. Let stand 5 minutes before serving.

French Toast Bake
1 pkg. (loaf) King Hawaiian bread
1 cup milk
1/2 cup sugar
1 cup maple syrup
1 tbls. Cinnamon
1 8oz. pkg. cream cheese
12 eggs
Cube bread. Spread half of cubed bread in greased 9x13 inch pan. Cut cream cheese into small bits and spread over top of bread in pan. Mix cinnamon and sugar together. Sprinkle half over bread and cream cheese. Pour about half the maple syrup over. Layer with remaining bread. Top with remaining sugar and cinnamon. Beat eggs and milk together. Pour over all. Top with remaining syrup and refrigerate overnight. Bake covered with foil at 350F for 30 minutes. Uncover and bake an additional 20-30 minutes. Serve with extra syrup if desired.

This is always a big hit and super simple!
Breakfast Casserole
12 oz. package of bacon – cut into small pieces for frying
24 – 32 oz package frozen shredded hash browns
½ onion -chopped
12 eggs – crack open and put in small bowl
2 cups grated Colby – Jack cheese
In a large skillet, brown the bacon until crispy. Drain on paper towel and leave grease in skillet. Place bacon in casserole dish.
Fry the potatoes and onion together until well browned; season with salt and pepper. Drain grease (if needed) and place them in dish with bacon.
Pour eggs in skillet and scramble until done to your liking; season with salt and pepper. Place into dish with bacon and potatoes. Mix well. Add grated cheese and keep warm until cheese is melted.
This recipe can be easily halved for 2 – 4 people. Enjoy!!!

FINNISH PANCAKES
4 eggs- well beaten
1/2 t. salt. Beat again .
Add 1/4 c. sugar.
Add 1 1/3 c. flour.
Add 1 qt. regular milk (slowly)
Melt 1 stick margarine or butter in 9 x 13 pan.
Pour dough into pan of melted margarine. Swish through with spatula several times.
Bake at 400 degrees for 45 minutes.
After baking, sprinkle top with sugar, as desired OR eliminate the sugar and use maple syrup!

1 (16 oz)loaf French Bread (sliced 1-1.5 inches or use 2 slices together if thin)
8 large eggs
3 cups milk
1 cup sugar
3/4 tsp salt
2 tsp. vanilla extract
1/4 cup butter
Cinnamon
Butter a 9 x 13" pan. Slice bread into 1" slices and lay, side by side as closely as possible in pan. Beat together milk, sugar, eggs, salt and vanilla. Pour over bread. Refrigerate overnight, covered. The bread will soak up the liquid. In the morning, uncover and sprinkle with cinnamon, dot with butter. Bake at 350 degrees for 45 mines to one hour, until puffy and golden.

Aside from the fact that I am going to storm l2rdhd's house for those scones, let me know if you want the polenta/mushroom/cheese recipe. I do a couple tweaks. It can be made the day before and reheated.

French Toast casserole:
I belong to the TV Girl Scouts and this is the recipe I was taught..
1 loaf Pepperidge Farm cinnamon Swirl Bread cut into cubes
6 eggs
3 cups milk
2 tsp vanilla
Place the bread cubes in a greased 3 qt shallow baking dish. Beat together the eggs, milk and vanilla and pour over bread. Press bread into the milk mixture. Cover and refrigerate overnight. Heat oven to 350 degrees and bake uncovered for 1 hour.
I chop up a granny smith apple and mix it with the bread. You can also use raisins, craisins, etc. If I have some half and half I will also use that in place of the milk. I have syrup/confectioners sugar/fruit as toppers.

ITALIAN ZUCCHINI CRESCENT QUICHE
4 c. thinly sliced unpeeled zucchini
1 c. coarsely chopped onion
1/2 c. butter
2 tbsp. parsley flakes
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. garlic powder
1/4 tsp. basil
2 eggs, well beaten
8 oz. shredded Mozzarella cheese
1 (8 oz.) can refrigerated crescent dinner rolls
2 tsp. mustard
Heat oven to 375 degrees.
In 10" skillet, cook zucchini and onion in butter until tender (10 minutes).
Stir in parsley and seasonings.
In large bowl blend eggs and cheese.
Stir in vegetables.
Separate dough into 4 rectangles. Press on bottom and 1" up sides of 13"x9" pan.
Spread mustard over crust. Pour mixture evenly.
Bake at 350 degrees for 18 to 20 minutes until knife comes out clean.
Include a large fresh fruit presentation; strawberries, pineapple, kiwi, blueberries, cantaloupe, watermelon, GRAPES
