These "do ahead" easy appetizers look great on a pretty platter; nice for any of those going to a New Year's Eve house party.
TORTELLINI ANTIPASTO APPETIZER KABOBS
20 SERVINGS (40 kabobs) 2 per person
Prep Time: 35 minutes
Marinate in refrigerator overnight
40 toothpicks or short skewers
1 9 oz. package refrigerated cheese tortellini
40 large pitted ripe black olives
40 pimento stuffed green olives
3/4 cup Italian salad dressing
40 thin slices pepperoni
20 thin slices hard salami, halved (or Genoa salami, halved)
Fresh parsley sprigs......optional
COOK TORTELLINI ACCORDING TO PACKAGE DIRECTIONS.
DRAIN TORTELLINI and RINSE IN COLD WATER.
IN LARGE RESEALABLE PLASTIC BAG, COMBINE THE:
TORTELLINI, 2 types of OLIVES, AND SALAD DRESSING.
SEAL THE BAG and TURN TO COAT EVERYTHING INSIDE.
REFRIGERATE AT LEAST 4 HOURS or OVERNIGHT.
BEFORE ARRANGING ON PLATTER DRAIN & DISCARD MARINADE.
FOR EACH APPETIZER: (on a short skewer or toothpick)
THREAD A GREEN STUFFED OLIVE.....
THEN A FOLDED PEPPERONI SLICE
THEN A TORTELLINI
THEN A FOLDED SALAMI PIECE
THEN A RIPE BLACK OLIVE
PARSLEY SPRIG IF YOU HAVE THEM
KEEP CHILLED IN FRIG UNTIL TIME TO PUT OUT.....

You could also improvise with other variations, such as cherry tomatoes, cubes of cheese, cubes of ham, gherkin pickle, etc. but the above combo is well received plus very tasty. HAPPY HEALTHY 2015
