View Full Version : Roasted vegetables--how much--how big--what's in it

I want to make roasted vegetables for 10 as a side dish.

Do you think I need a total of 10 lbs of veggies to feed everyone?

I have 2 10 x 16 trays. Will that hold enough to bake for 10 people? I read olive oil and keeping them separate is important.

What veggie's would you recommend and any spices [fresh or dried]?

Looks wonderful; I love roasted vegetables. Someone asked about servings in the comments section, and the author said this recipe will serve "8-10 easily". The squash will cook down a bit, so I'd go with the recipe as written, plus a bit more if you are worried about it. She has a total of 5-5 1/2 lbs. Maybe add a few purple potatoes if you can find them. Carrots roast beautifully, as do brussel sprouts and fennel. Yum. I'm going to try this recipe, too.

This is a great recipe I've made many times. Orzo with Roasted Vegetables Recipe : Ina Garten : Food Network (http://www.foodnetwork.com/recipes/ina-garten/orzo-with-roasted-vegetables-recipe.html)
I switch up the veggies to suit me. Sometimes I make it roasted "root" veggies. Sometimes I make this one with eggplant and add other things. Serving it over the orzo looks great and stretches the dish to feed many.

I found this. Does it sound right?
Side Dish
Asparagus, carrots, cauliflower,
broccoli, green beans, corn kernels,
peas, black-eyed peas, and so on 3 to 4 ounces/per person

Potatoes and yams 4 ounces/ per person

for 12 people 6 lbs of starchy and root veggies
