Thanks, graciegirl. I will have to remember this rule for these type of steaks. Slight diagonal and against the grain.

Gracie, dear, don’t you think it’s ironic that these used-to-be inexpensive cut are now very pricey? It’s a shame, because they’re really good.

I'm with you. Now that we found the Butcher at Sam's I have gone back to what I found out yesterday is too :mad: much steak. Once a week max. So that cool, I think I could survive on COD for every meal. Except for that steak on Sunday. I eat whatever the boss buys and I'm grateful for it. Can I get an Amen? :mmmm:
