I can not dew the gravy. I want to, but I think the blood-flow will stop.

4 tablespoons unsalted butter [sub with olive oil]
2 garlic cloves, minced
3 thick-cut, boneless pork chops
1 cup mushrooms, sliced
1 tablespoon dried oregano
1 tablespoon dried thyme
[1/4 C of stock]
1/4 cup all-purpose flour [skip] add 1 T of instant potato flakes at a time]
1 to 1 1/2 cups whole milk (can use heavy cream) skip
[sub with low fat sour cream---! T at a time]
Salt and pepper to taste

"Cream gravy", "White gravy", "Milk gravy", "Sawmill gravy", "Country gravy", "Pepper gravy" - whatever you want to call it, that's what my mother made along with fried chicken or fried pork chops when I was growing up. It's still comfort food to me. I never fry chicken or pork chops at home and almost never make mashed potatoes and this kind of gravy. But I do order it on occasion when I'm eating at restaurants that serve it. I think Cody's does and maybe Texas Roadhouse. I know that Cracker Barrel does.

If you eat them frequently. I eschew the butter in this dish and use skim milk. They are no worse than steak with bernaise sauce.

I have a seasoned pan and I rarely use any fat to brown porkchops. High heat and fast will brown them usually.

Yes. THAT WAS A LOT OF BUTTER! A small amount of vegetable oil would work but pork chops usually render fat on high heat. (High enough to brown) Also garlic in high heat gets brown and bitter.

Tasty, I'm sure. But within a couple of hours of enjoying that gravy, a major gall bladder attack is certain for me. Got to be a big "No".

I often wonder now that I have moved to a diverse area where all kinds of foods are eaten, if people would like certain things if they didn't have health issues. Almost all things that are favorites in any part of the country are high in fats. A good Italian sauce has oil or sausages that are high in fat....A delicious steak is laden with fat if it is tender and juicy. Fish are probably the best choice, especially Salmon and Tuna because of their "good" fats but people generally baste fish in butter or fry them in oil.
My real question on this thread is ...do you or DID you like pork chops with cream gravy. Was it part of your diet? Had you ever eaten it? Is it yum or none?

I eat pork chops grilled and never with gravy. Fish grilled or baked never fried. When I make Italian gravy I bake the sausage first to eliminate a lot of the fat. I never fry anything.

My favorite Birthday Cakes came from a bakery in Tenafly NJ. It was a standing doll wearing a huge dress made out of cake and frosting.
I have never had any interest in eating cream gravy. I Googled images of cream gravy and it does not look very appetizing to me.

I never ate cream sauce growing up. It was never served by my Mother or Grandmother. As a kid I liked meat, potatoes, chocolate, cookies, pizza and cake. Some fruit and only raw vegetables. I have never heard of corn custard.

We never had creamed anything when I was growing up. I remember occasionally making Birdseye frozen creamed spinach as a newlywed. But we never made cream gravy. My DIL made biscuits & gravy for us in Australia, and I liked it.
Eschew means to avoid. As in eschew obfuscation.

So agree with you. They have ruined pork chops, they are tasteless chunks of fiber. They used to be sweet and juicy. Who made the decision to breed out the fat in pigs?
As for creamed anything ............ not for us.

One of our favorite things. We find porkchops that are full of taste. The trick is to fry them quickly, being sure that no pink remains. (Trichasomething) Over cooking them at high heat makes them tough.
Here is something that we eat occasionally that tastes very nice. (Notice I didn't say yummy? GPSMA?) Sautee a pound of hamburger and half a minced onion until done, no red, add a heaping tablespoon of flour and brown, then add about a half a cup of milk (maybe more) and salt and lots of pepper. Serve over toast or biscuits with a vegetable and a salad. Comfort food. Anybody else like it?

When I was growing up my mother and father occasionally entertained and for a special dinner my mom would make timbales. Timbale irons of different shapes were dipped into batter and then deep fried. These formed shells into which went creamed chicken and creamed peas. So delicious.

Hurray for you. Pork raised these days has so little fat, it’s tough to make an old-fashioned flavorful pork gravy.
Speaking of gravy, my Polish grandmother made the BEST. Her secret ingredient is what she called “burned sugar.” She carmelized sugar until very dark, added a bit of water after it cooled, and kept it on the pantry shelf. Use sparingly, little by little until you get the taste and color your want. Homemade Gravy Master!

Love that. My mother had to feed seven kids on a small budget. She usually served it over mashed potatoes or broad egg noodles. She called it goulash.

Braised meat of any sort is a treat. Pork chops, seasoned long and slow with cream gravy. It does not get better. Both Grandmas also made the best croquettes from any piece of roast that was left over topped with some version of a sauce. What the hell folks, if you moved to The Villages, time is short and so are the pleasures infrequent.

Dad was Southern. Mom was German. Dad won most things at home but the gravy on everything never stood a chance around Mom. So, rarely had sauces or gravies on meats except on turkey and pot roast. Never missed it. Still don’t.
I do remember an argument they had about white gravy on fried chicken. Mom said no. If he wanted sauces on his meat, he should have married a French woman. Never heard Dad say a thing about gravy again.

LOL. Great story. You reminded me of one: "I met an acquaintance a couple of months after my father's wake. She said, "Oh your mom is so funny." "How so?", I asked.
She replied: "While talking to your mom I said, "I'm so sorry, I know how much you are going to miss John."
And without missing a beat mom replied: "Yeah, he made such good gravy."
