Do you have a recipe for rabbit that you have (snicker) actually prepared?

Have you ever had rabbit as food? Yummy?

Thought I'd hop on this topic before the posts multiply.

In my tenure as a Wine food matching expert, I was hired to provide beverages for an exotic food diner.

Boiled Ostrich eggs - appetizer - Premier Cru Chablis
Rabbit Stew - soup - Ponzi Oregon Pinot Noir
Roasted Wild Boar - entree - Opus One, Calif Bordeaux blend
Caviar Ice Cream - Bollinger RD Champagne

I remember I thought the all the food tasted strange. The stew was like a goulash, with carrots, (what else?), but was a little stringy and chewy.

I actually liked the Wild Boar.

i've never actually prepared rabbit. They kept hopping out of the pot.

Skin the rabbit, soak in salt water for 24 hours, mix bread crumbs with raw egg, roll the pieces of rabbit in the mixture and fry it. Gooooood

Skin/cut up the rabbit(s), cold water rinse parts thoroughly, (we never soaked for any amount of time) roll pieces in mixture of 1/3 corn meal, 2/3 white flour, tbsp black pepper, tbsp salt.

Melt 1 stick butter in 12"-14" iron skillet med high heat. Brown rabbit pieces, turn down to med heat cook til done (like chicken).

Serve with mashed potatoes, carrots or string beans, sour cream/cucumber/onion salad and strawberry rhubarb pie for dessert. Hmmmmm!

If pheasant season was also in we often would prepare them same way and cook together.

I've had rabbit at a hotel in the UK. I had it in a stew like form and it was delicious. Very tender and sweet. I don't think I would eat it now. I certainly would not prepare it for myself as I have a little bunny living in my yard and it would be liking eating one of your own!!!:faint:

Years ago I had rabbit a couple of times as a child. My parents told my sisters and I it was chicken. Fooled us. Didn't find out I had actually eaten rabbit until several years later.

When my two oldest nieces were in high school, they were very active in 4-H. Both girls raised Holland Lop rabbits for show. One of the rabbits lived until niece #2 got her bachelor's degree 2 years ago.

I don't know if I could knowingly eat rabbit now.

Not to hijack the thread, but I ate squirrel many times as a child as it is a favorite dish of my dad's. I haven't had squirrel for many years. Squirrel hunting season starts in Iowa (where my dad lives) on Sept. 2. A few days after that, my dad will have several squirrels in his freezer for eating during the fall and winter.

When I first moved to Chicago, people thought it was very strange when I told them I had eaten squirrel. But when you grew up on a farm in eastern Iowa during the Great Depression as my dad did, his family did not have had many material possessions, electricity or indoor plumbing, but at least they didn't go hungry.

The Navy used to serve fried rabbit in Yorktown, VA. in the late 60's. It was one of my favorite meals.

My uncle used to raise rabbits and we used them where ever chicken was used. When fried tasted a lot like chicken slightly sweeter flavor.

I may be very wrong, but I think Rabbit was acceptable as a meat product until the outbreak of Myxomatosis among wild rabbits. I think privately bred rabbits are still edible, but the myxomatosis virus scared so many people that Rabbit is no longer considered edible here, although it is still eaten in other countries.

Google "hasenpfeffer" and several recipes will come up. There is a website called "Rabbit Advocacy Network" that lists restaurants serving rabbit.

I still don't think I could eat rabbit (at least knowingly).

But I love chicken, lamb, pork and beef. No problem eating those.
