I am making something today that takes about four hours start to finish. It's on the stove now, just below a simmer, for three hours. It's from Bon Appetite--BA's Best Bolognese. I've been looking at it for over a year, watched the video of Andy Barghani making it--not difficult but I never took the time. I watched the video again twice before starting. We shall see. If I like it, next time I will make it with Beyond Meat. Or maybe we'll be let out of our cages onto the pickleball court, and I'll never make it again.
What have you made while stuck inside (my golf buddies flew the coop back to Canada). Something new? Something you made up (looking at you, Tomwed!)? Something you've made before but didn't have the time till now...?
I'd enjoy hearing about it.:)

I made minestrone last week. I’ve been wanting to do so for awhile and took the opportunity since I wanted to do something different other than reading or knitting. The recipe that follows shows sprinkling Parmesan on before eating, which I hadn’t heard of doing but boy, it was good. I’ve never cooked with zucchini before (I know, right?) but I liked it.

I also tried my hand at Churros. I had to use a zip lock bag to squeeze into the hot oil. Two things I will do next time is make the hole MUCH smaller; on my first try, they ended up looking like t**ds. The second thing I will do differently is to make a double batch, as they’re really good!

I braised lamb shanks in homemade gravy, the same with short ribs, smoked brisket on the green egg and made gravy with meatballs and 2 types of sausage. Basic stuff grillled lamb chops, marinated pork tenderloin, grilled steak, turkey thighs and marinated salmon several times.

Using leftover marinara sauce, leftover rice, some leftover ground beef from making burgers and some extra peppers and onions. Created one of my favorite soups, stuffed pepper soup. To me it tastes like my grandmothers stuffed peppers but in a soup.
Trying to make some crock pot chili recipes and trying different cornbread recipes. I never tried grinding up some older popping corn for my cornmeal but it worked out just fine when the store shelves were bare!
Really digging the different pizza dough recipes found online! Pizzas, calzones and focaccia have never been easier and more tasteful than in my kitchen!
Also various types of homemade breads and muffins.
Red beans and rice with smoked sausage.
Cheese grits with shrimp!

my wife and I both enjoy cooking and it's been a hobby of ours for years (there was a time that we'd take cooking classes at culinary colleges on the weekends)....
we routinely create a two week menu...which makes shopping easier....so here's what we've been up do:
a week ago my home made Limoncello matured after 80 days...that's now bottled
last Friday we made Choppino (Italian fish stew...8 types of fish)
Saturday we made Chicken Fajitas
Sunday we made Pasta e Fagioli
Today we made Tiramisu...and we're having Pasta Puttanesca for dinner
Tuesday is Porchetta (Italian roast pork with fennel) and baked carrots in ricotta
on Thursday we'll cut up about 20 lbs of pork butt add our ingredients, let is sit 24 hours in the fridge and make sausages on Friday
sometime this week I'm going to make Welsh Rarebit for the first time
next week we're actually making Chateaubriand for the first time...we'll cheat on how we make the demi-glace though and save about 8 hours by using ready made beef stock in the demi-glace recipe
later next week we're making a lamb and okra stew, another night Vongole Bianco (clams and pasta), and bourbon short ribs on another
we don't make an involved meal every day and often there's enough left over for a second meal....and some days it's just one of our many home made soups and a grilled cheese sandwich.

My wife excellent cook and we enjoy fixing meals we like. So the current restaurant crisis don’t bother us.

Easy to grow in pots down here and they can keep growing for few years and producing. Don’t need much room for pot and little sun shine. Down here white flies will attack leaves in summer and early fall, only thing I have found that limits fruiting.

Ina Garten has a new cookbook titled Modern Comfort Food. But, alas, the publishing date is in the fall. I wish she would speed it up. Many of us could use it right now.
The info on Amazon tells all about what will be in it — comfort food, for sure. I put the book on pre-order so I don’t forget about it.

Riding a time machine today. Tuna casserole. Married 53 years and probably haven't had one since around year five.
Last week I decided to make tuna casserole without noodles to reduce the carbs. Afterwards I realized I had re-invented Tuna a la King.
I've been on something of a corned beef kick; sometimes as a meal but mostly to make hash. I love it with lots of onion and cabbage. I've also discovered there's such a thing as canned chopped potatoes; they have a firm texture and are easy to crisp up before adding to the hash.
I'm stereotypically old and required to eat soup, so make a batch of cream of vegetable (broccoli, zucchini, cauliflower, tomato, asparagus, carrot) a couple of times a week. Sometimes I'll bust out with chicken tortilla, woot!

A jar of BERTOLLI ( Parmesan & Romano ) " 2 " Hot Italian Sausages ( Publix) simmer over low heat for awhile, I then poured over Penne that I prepared 2 days ago.
Total time 38 minutes. Result Delish.

I like to cook, but am not into fussy. I like to keep it simple and use as few pots/pans as possible. Our “corona cuisine”:
We start almost every dinner with a salad, either traditional greens or caprese.
Over the last month I’ve made two rib roasts in the oven, two different BBQ briskets in the crock pot, simple one pot beef stroganoff using ground beef and sour cream, creamy curry chicken with naan, Italian chicken, homemade meatballs with red sauce over pasta, baked pork chops, Italian sausage and farfalle pasta, lemon cream chicken, burritos, sloppy joe. We buy cheap cheese pizzas from Aldi and doctor them up ourselves, and they are as good as what you get from most pizza joints around here.
There are only 2 of us, and these dinners usually make enough for a second or even third meal.

I have an instant pot and have been making soups (15 bean, pea soup and I varied the way I have made them, adding more veggies). Love my instant pot. I also make my steel cut oats in the instant pot every 3 day. Going to make chickpeas in it later.

We are trying to loose weight so have made many things with ground turkey. Yesterday it was Shepard's pie with a cauliflour mashed potato top and fresh green beans. Today it's pizza with turkey pepperoni, canned tomatoes and low fat cheese.

I'm a challah baker too. A couple weeks ago I made 3 enormous loaves. It's a 4+ hour recipe because it has to rise three times before baking. 5 eggs, 4 cups flour, no bread machine, and I don't own a mixer so it's all done in a big bowl with a wooden spoon, and I knead with my hands on a huge bamboo cutting board, old-style. I leave it on the screened lanai with a moist hot towel covering it to rise.
I've made banana breaad, tollhouse cookies, shrimp scampi, meatloaf, meatballs and sauce over penne, chicken salad. Same as usual.

And Bon Appétit's Test Kitchen has many videos on you tube. They are all young, interesting, funny cooks. Also one of them, Claire Saffitz, does a video series called Gourmet Makes, where she recreates packaged products from scratch--like M&Ms, girl scout cookies, snickers bars, Pringles, skittles; mostly junk food, but very fun to watch.

Its easy so far 50 days Lasagna, Brisket, Home made Pastrami, over a gallon of pasta gravy with and without meat. Meatloaf, eggplant parm, meatballs, Manicotti, clam chowder, beef stew, pork roast, beef roast steaks
Unfortunately we have gotten so good at cooking we may never go to another restaurant for quite awhile, made the way We likeit.
Prep time is usually less than an hour the stove oven and grill do the work.

Goodlife's comfort soup for rainy days
couple cans of cream of potato soup
2 medium potatoes
ham steak
frozen sweet corn
boil potatoes for 30 minutes, let cool then dice
fry diced potatoes in olive oil, season with garlic, salt and pepper
fry diced ham in olive oil
add soup and milk to pot, heat and add fried potatoes, ham and sweet corn
serve topped with grated cheddar cheese and parsley, garlic texas toast

I love Pastitsio. We used to get it from a Greek Orthodox church when living in Pittsburgh. Those churches have lost a lot of $ lately, as did the Catholic Church with their Friday fish fries.

Recipes I have made that I never would have except for being homebound are; (1) One Skillet Beef Shephard's Pie ( no way it would have fit in one skillet! so I used a large casserole dish. It took a long time, but it was good! (2) The Ultimate Potato Soup Recipe Author Sam Merritt (3) Slow Cooker Apricot Chicken-www.dinneratthezoo.com/slow-cooker-apricot-chicken, and (4)Lemon Chicken Orzo Soup. I am shariing with a couple of neighbors so it keeps me motivated. I would recommend any of these recipes.

Lemon Chicken Orzo Soup. Yum. There was a similar recipe in the Silver Palate Cookbook.
I have made Mango Thai Chicken Curry, Rogan Josh (Indian lamb curry), a savory Dutch Baby pancake in a cast iron skillet, topped with burrata and arugula --which was such a big hit it became Sunday Supper--a low-cal black bean & corn salad, Hungarian Goulash, a cabbage casserole in the Instant Pot, grilled flank steak pinwheels (pounded and rolled up with bacon, oregano, parsley, salt & pepper inside), chicken fajitas, pizza, fish tacos, sloppy Joes with homemade cole slaw inside the bun, cookies, cookies, and cookies. I don't eat meat, so some of this was in two forms. Oh, and chicken Marsala. And a mustard vinaigrette chicken & potato sheet pan dinner.
You all are giving me some more great ideas.

I will have to say that this virus hasn't slowed me down much. I retired on Feb 1st and have lost 7 pounds without trying. In the meantime I have tried several recipes. Braised short ribs, smoked baby backs and Cajun fried hybrid bass I caught. I regularly make
Spaghetti Bolognese, Ahi Tuna, Pot Roast and whatever else I want to experiment on. Don't get me wrong, my wife has her specialties as well. Suffice to say we both like to cook. To me, its an expression of love. Nothing like hearing, "hmmm, damn that's good". When you don't hear that then its, "here honey, have another glass of wine". LOL.

I signed up for an online cooking course with Chef Todd Mohr. He teaches cooking methods vs recipes. I have made many delicious meals WITHOUT recipes. Google Web Cooking Classes and see if this works for you.

I have had it up to here with planning meals each night, so today I made a scone ring and we had the scones with butter and strawberry jam. Was great and a really nice change from cooking.
Tomorrow, back to cooking ............. pork chops, mash and corn.

This mess is requiring me to use some skills I learned long ago; how to stretch meat, how to make things that I had been using a mix for or were purchased ready to heat. I think of all of the yummy casseroles that had little meat or protein and all of the stretcher desserts like rice pudding and plain old custard pudding that our mothers and grandmothers made for us.
I wonder if this is changing habits in kitchens of young people during this time. Cooking from scratch really does save you money. Staying home requires one car. It may be quickly forgotten, but maybe something will stick.
Tomorrow I am baking Henry a yellow Birthday cake from scratch. I hope the shortening has not outlived it's stay in the pantry. I will make buttercream frosting with a tablespoon of rum if we have any, if not thank heavens for the big bottle of vanilla. We will have something with fried potatoes and onions. He loves them, Helene isn't wild about them but it is his birthday tomorrow. Our anniversary and his birthday are one day apart.
I am somewhat concerned about hearing of breakdown in food supply. I think of it as a real danger of this pandemic. I stocked up on rice and pasta at the beginning while others were concerned about bathroom tissue. Who knows what will be the next challenge, and who will blame what for it. Or who? We will all do what we've always done, the best we can.

This mess is requiring me to use some skills I learned long ago; how to stretch meat, how to make things that I had been using a mix for or were purchased ready to heat. I think of all of the yummy casseroles that had little meat or protein and all of the stretcher desserts like rice pudding and plain old custard pudding that our mothers and grandmothers made for us.
I wonder if this is changing habits in kitchens of young people during this time. Cooking from scratch really does save you money. Staying home requires one car. It may be quickly forgotten, but maybe something will stick.
Tomorrow I am baking Henry a yellow Birthday cake from scratch. I hope the shortening has not outlived it's stay in the pantry. I will make buttercream frosting with a tablespoon of rum if we have any, if not thank heavens for the big bottle of vanilla. We will have something with fried potatoes and onions. He loves them, Helene isn't wild about them but it is his birthday tomorrow. Our anniversary and his birthday are one day apart.
I am somewhat concerned about hearing of breakdown in food supply. I think of it as a real danger of this pandemic. I stocked up on rice and pasta at the beginning while others were concerned about bathroom tissue. Who knows what will be the next challenge, and who will blame what for it. Or who? We will all do what we've always done, the best we can.
And maybe y/our meat-stretching skills will come in handy if there is a meat shortage.
If you have time, tell us some of those dishes you used to cook that stretch meat. Just names would be fine, we can always google for recipes.

Which reminds me... I saw single serve packages of mashed potatoes, 2 servings to a pack. I think the brand is Simply Potatoes, in either Winn-Dixie or Publix. I haven't tried them but my husband says they're really good.
When we got the larger package, it never gets used up before going stale.

This I didn't have to make, which makes it nice. I like BBQ shredded pork sandwiches, and my favorites is Boogaloo BBQ. It's the trailer that shows up at the square at Cruise-ins and other events. I thought I would try Jack Daniels pulled pork. Bought it at Walmart for about $7.98 and I didn't really like it and threw out half of the container.

I was Publix a couple of days ago and saw Lloyds BBQ for $6.69, so I bought it and we had it when we got home. Just micro-wave the whole container or take out what you need.
Lloyd's was great, tasted just like Boogaloo BBQ, I couldn't tell the difference. I went online to Walmart and saw they have it for only $4.27. I went to Colony Walmart yesterday and they about 10 in stock, so I grabbed two. On a hamburger bun, it is delicious.

The weather, tomorrow, is going to be nasty and I am going to Sam's to see what they have. I like some of their soups, particularly like the shrimp and corn chowder and sometimes they have the Panera tomato soup that I love. I might pick up a chicken, who knows ................... have to wait and see how the spirit moves me tomorrow.:)
I could live on scrambled eggs, however the guy who lives with me likes to eat. :icon_wink::icon_wink::icon_wink:

Been getting Hello Fresh and cooking it. Don't have to go to the store, don't have to worry about ingredients missing on the shelves and they deliver right to your door. Only way to go as far as we are concerned, at least for the time being.
I am making something today that takes about four hours start to finish. It's on the stove now, just below a simmer, for three hours. It's from Bon Appetite--BA's Best Bolognese. I've been looking at it for over a year, watched the video of Andy Barghani making it--not difficult but I never took the time. I watched the video again twice before starting. We shall see. If I like it, next time I will make it with Beyond Meat. Or maybe we'll be let out of our cages onto the pickleball court, and I'll never make it again.
What have you made while stuck inside (my golf buddies flew the coop back to Canada). Something new? Something you made up (looking at you, Tomwed!)? Something you've made before but didn't have the time till now...?
I'd enjoy hearing about it.:)

yes, my error! Psomi is just Greek for bread. I was trying to impress with my knowledge of food terms in Greek! I don't speak much of it but I can order food from my seat like a true Athenian!

I've been using my automatic pressure cooker a lot this virus season, and it's just an amazing appliance. Unfortunately, I was at Publix yesterday, thinking about buying a chuck roast for the pressure cooker, and found a 2.5 pound chuck roast was selling for over $20.00. Sorry, no chuck roast is worth anything like ten bucks a pound. I bought two pork chops and a pack of chicken legs instead.

Here in TV, my wife makes great crab cakes by going to Sam's Club. They're the only place in town that I found that sells a pound of fresh lump crab meat in stock all the time for $22.99. In fact, that's the main reason we are members there. She will make about 8 small ones and then cook them in the oven. They're really good using the Old Bay recipe and paired with cole slaw, it doesn't get any better.

I love cheesecake so I decided to make NYC Junior’s Cheesecake, 7 inch size and minis. I made the classic with a hint of lemon, chocolate and almond. All were outstanding. Took some slices of the minis to neighbors. Never would have tackled this if it weren’t for the virus. Time consuming but so worth it❗️

When it dried up today we decided to take a run over to Sam's both to restock and to look for John's crab, unfortunately they did not have any crab John so my crab cakes will have to wait.
But, we did pick up a chicken, they do really good rotisserie chickens. So tonight was chicken, baked potato and salad and it was excellent and so easy, and so much left over for sandwiches and chicken salad. Yum.
I will keep checking on the crab meat John!

I'd say in the last 5 years only once did they not have the crab meat when we went. They usually have about 25 to 40 of those one pound containers. Of course, anything might happen with the current situation. They're normally in a reach-down cooler in the back of the store, in the middle section. We got some week before last. We'll probably try next week ourselves.

I've never found any ready made crab cakes of any brand, even Phillips from Maryland, that are worth buying. One problem we have, my wife has an aversion to onions, and for whatever reason, if you read the ingredients on just any crab cakes it will list onions. Just get the Old Bay, they have 3 or 4 sizes at Publix and the recipe is on the can, or on their website. Here it is from the website:
2 slices white bread, crusts removed and crumbled
2 tablespoons mayonnaise
2 teaspoons OLD BAY® Seasoning Substitutions available
2 teaspoons McCormick® Parsley Flakes
1/2 teaspoon French's® Classic Yellow Mustard
