My kitchen smells awesome! I'm betting the neighbors can smell it.

Put about 1/4C olive oil in the bottom of a large pot
Saute about 5 cloves minced garlic
Add a large chopped onion and saute
Add about 1lb crimini mushrooms and saute
Puree up 4 cans roma tomatoes and toss them in
(Note: Am Test Kit says ok to use canned, the less processed the better. Silly me, I dumped them in whole, tried squishing them as they cooked, ended up panning for gold as I pulled them out to puree. I've always used fresh in the past)
Add small can tomato paste
"Nickle" size of fennel
"Lg Marble" of salt
"Lg Marble" of sugar
about 2 lg tbsp oregano
3-4 bay leaves
about 1/2 C leftover Malbec from last night
Tilt the lid on the pan so it doesn't mess up the stove but lets steam escape
Simmer while the cart fixer is here and while waiting for bug guys to give new bids
Stir while enjoying the fresh air.
Fresh basil and grated cheese to come at the end.
Get a new bottle of wine handy. Might need more in the sauce!

also, using fresh basil is nice, too. Have you ever put your sauce in the oven 350ish in a dutch oven (Le Creuset-like)? - that way, the sauce becomes rich and flavorful and you don't have to stir or fret about making sure the sauce doesn't stick. Just a thought....your sauce recipe does sound very good!!!

I'll bring over the crusty bread and a couple bottles of good Chianti Classico. Where is the party? That sounds like a great sauce.

Sure does..... now, which shape of pasta are you gonna use?
Which cheese is your favorite to grate... Parmesan, Romano, Fontina or Grana Padano?


P.S. Did you know that Grana Padano was one of the primary foods used to feed the Gladiators? I was told that by a shopkeeper in Rome.

YOUR NOT DONE YET: Set aside one loaf of Italian bread. Every half hour or so cut a slice of bread and dunk it in the sauce to test it. No double dipping. Do this until either the sauce or the bread is gone. P.s. Open another bottle of malbec before you start slicing the bread...Mama Mia!

I turned the stove off at 4pm. Went to a meeting and never got home until 9pm. Tomorrow I'll get the wine and bread, a #9 spaghetti, cook the sweet Italian sausage and toss in the pot to blend while I make a nice Ceaser salad, then chill and swill. I wish you all could come over!!!
