My grandmother used to say, "This knife is so dull it wouldn't cut through melted butter!" Well, that's about the condition of all of mine. Expensive. Cheap. It doesn't seem to matter. I've tried several sharpeners. I have to admit not very aggressively. But I'm serious this time. Could anyone suggest a good knife sharpener to me? I would really appreciate your help. :mmmm:

Every so often, Joanne's has a professional knife sharpener on site. Your knives will get honed to specs. Check with Joanne's for dates and cost.

The BEST I have every used is called Accusharp. Got mine at a bait and tackle shop but you can order online or at Amazon. Never seen a better tool to sharpen a knife at such a low price (under $15). America's Test Kitchen has one that sells for around $135.00 that sharpens at the proper angles and is what they "say" they use at there facility. They had one show where they tested all different models, types, and price range and this one was the best. I am thinking about ordering one for myself.

I've got a set of J A Henckels Professional "S" knives. All I ever do is touch them up with a steel. They're so sharp I could do surgery with them. :D
Best to get good knives and don't bother having the cheap ones sharpened.

And dont forget, that cutting butter with any knife will dull the blade. Always keep a knife just for butter!

If you're looking for a home remedy, I have a sharpener by Ozitech call Furi Diamond Fingers. It was purchased online. It has diamond crusted "fingers" that will rub against the blade at the proper 20* angle when the knife is drawn through it. It does a good job of improving the performance of my chef's knives, but nothing beats a professional job of restoring the edge of a blade.

Once you do get them sharp, use a sharpener very sparingly. Light passes with a good steel or ceramic is all it takes to keep an edge on them. More pressure with the steel/ceramic actually makes the edge worse.

Another vote here for the Accusharp at less than $10 from Amazon.
America's Test Kitchen wrote, "The hand-held AccuSharp Knife and Tool Sharpener ($10) has been a go-to tool in the test kitchen since 2006, when it performed nearly as well as our favorite electric sharpener, at a fraction of the price."
The sharpening blades last a long time, but, when they do wear out, you can take the tool apart with a screwdriver and reverse the blades for a second life.

Yes, but do you mean there is no where in The Villages you can get knives professionally sharpened? I see an opportunity here.

Thought I'd add a sideline to my original post...
I purchased my knives at restaurant supply store in upstate NY many years ago following a cooking demonstration led by a young perky cook who was a spokesperson for a local supermarket chain. Sadly the store is now out of business but the young cook certainaly isn't...the cook was our own Rachel Ray!

I actually purchased an Accusharp from Amazon because of your recommendation and because it was the least expensive. When it arrived, I sharpened my Henkels paring knife and cut little cherry tomatoes in half. OMG! What other planet have I been living on! It's actually scary how sharp that little knife is! I have moved on to my Henkels (I call it my big knife). Same thing. Now I'm flying through every knife I own. Even the orange one.
Needless to say I join in the recommendation. I would defer to other posters, however, because the knives are so darn sharp. I am a little leery of them. Please, if you go this route, take every safety precaution. They are VERY sharp! Especially if you, like me, are accustomed to knives that won't cut through melted butter! :a040:

Here in Perrysburg we can take our knives to any meat counter in Kroger or Meijer's grocery store and the butchers will sharpen our knives for no charge.
I would think Publix or Fresh Market would do the same - call and check.
Oh, and remember to be sure to carry them with a cover -
