This recipe may not be “gourmet” but it always comes out yummy and is easy......
Makes 8 servings which are baked in two (2) 9 x 13 inch baking dishes.
350 degree oven.....
CRANBERRY CHICKEN
8 servings
4 pounds skinless, bone-in chicken pieces (breast halves or thighs)
16 oz. can whole cranberry sauce
8 oz. bottle Catalina salad dressing
1 envelope onion soup mix
Place chicken in single layer in two well greased 9 x 13 baking pans.
In mixing bowl, blend together cranberry sauce, Catalina dressing, onion soup mix
Pour over chicken pieces
Bake 50 minutes to 60 minutes or until chicken is done

Serve with baked potatoes and “CREAMY SPINACH”......
CREAMY SPINACH
9 servings
4 10-oz. pkgs. frozen chopped spinach, thawed and squeezed dry
8 oz. pkg. cream cheese
1 stick (1/2 cup) butter
Fine bread crumbs like Progresso
Paprika (optional)
Place thawed chopped spinach in lightly greased 2-quart baking dish
Soften cream cheese and butter in microwave for 1 minute.
Beat until combined. Pour over spinach.
Sprinkle with bread crumbs and paprika if desired.
Heat uncovered in 350 degree oven for 30 minutes.

You can nuke the baking potatoes in the microwave.....
Very easy but nice dinner.........
