Which nothing but reminds me. Mike ordered Veal Francese at a restaurant last week. After it was served, I called the waitress and asked to see the menu. I wanted to see the written description of this item. Well, Francese was NOT on the menu. There were Veal Parmigian, Veal Marsala, Veal Piccata but no Francese.

This dish had mushrooms and I could taste the Marsala wine/Sherry combination. I told the waitress this is not Veal Francese. She spoke to the cook who confirmed that he had made it with garlic, Marsala and Sherry. I informed her that a. -- the veal was not cooked "Francese" style which means that the veal is first floured THEN coated with egg and fried. And, b. the traditional Francese sauce is made with butter/olive oil, white wine, chicken stock, lemon, S&P and parsley. Although the waitress didn't have a clue, to her credit, she googled it on her phone and verified my recipe.

I was annoyed and wanted to made a big deal out of it but my overly sweet, complaisant husband prevented me from doing so -- "it's my dish and I'm not complaining" -- he is a lot nicer than me!

I dunt blame you NOTHING but not even one little bit. You were just what you say exercising ur N.Y. rights. You can substitute chicken cutlets in this recipe -- just make sure they are cut very thin and/or pounded out to tenderize. Just as good if you follow the recipe. In fact here it is -- Chicken Francese
