I know nothing about making kimchee---what is your recipe and does it require exotic ingredients or can something more local be substituted.

Does this kimchee recipe require you to bury the goods in the backyard for a couple of months.

Kimchee compromises vegetables, sometimes fish or shellfish, salted and fermented to preserve it. After the 16-hour salted soak, it is cubed,mixed with such things as fish sauce, hot chili powder and flakes, garlic, ginger, scallions, watercress, &c. Submerge all in a salt solution and ferment on the counter for a week, then three or four weeks in the fridge. It is nothing if not “fragrant.” It would be nothing to post on the kitchen forum if you like.

My wife makes something called Sofrito once every year. Like your concoction it will wake up your sinus's.

I’d be very interested to know about the sofrito as I know NOTHING about it. My dad was a plumber and one day he did a job at the home of a Puerto Rican family. The lady of the home was, I think, preparing a sofrito for the evening meal, redolent of nothing but garlic. My father hated garlic; I wanted to stay for supper!
