Chicken

Maybe someone out there my know while you can go to any of our grocery store and find many different cuts of package chicken. For some time now I can't find split chicken breast, all kinds of skinless chicken breast, but none with the bone and skin. I've asked the store, and they got no answer. You ask why I care, I have a couple of recipes that require split breast.

Stu from NYC 07-09-2021 01:38 PM

If all else fails buy a whole one

Koapaka 07-09-2021 01:51 PM

Try "Best Meats" down on Main St in Wildwood. If they don't have it available at will, you should be able to let them know in advance and get it on order.

Toymeister 07-09-2021 01:56 PM

Chicken processors prepare the product that sells.

Dark meat, for example, is processed for the Latino market as they prefer dark meat. Most dark meat is exported to Latino countries.

manaboutown 07-09-2021 02:08 PM

Thighs are my favorite part of a chicken. They are flavorful and slide right down. Frequently the breasts are so dry they stick in my throat. I have to eat chicken breast with mashed potatoes and gravy or in a sandwich with lots of mayonnaise to get it down.

davem4616 07-09-2021 03:03 PM

I just saw split chicken breast, skin on and bone in at Publix, Lake Deaton Plaza last evening

another option is to go over to Best Meats in Wildwood on 301 and order it

Sadly, people seem to argue about anything. Truth I'm not sure I understand what the original poster has in mind. However, I am certain you can find a video on the internet on how to do it. All the toys people buy and wonder where to store them. A few good sharp knives is all professional cooks use. How to properly sharpen a knife, you do not need a bunch of gadgets for that either. A cheap knife will not be easy to sharpen and it will not hold a good edge. You are far more likely to cut yourself forcing a dull knife or the wrong knife to do what it was not designed to do.

Lots of chicken here is skinless, without bones. Split has skin, rib meat, and bones. Give a more flavorful dish, if cooked properly, moist, tender. Probably the OP doesn’t want a whole chicken, to throw away most of it. Plus whole chickens seem to be not easily accessed, at times, and if they are, very tiny, thus, getting a reasonable size split, might be futile. I am guessing most don’t cook enough to need one. I can bone a chicken in minutes, but won’t use most of it. Our chicken came from the coop, until we moved here.

We pick up our splits from the base. Always in abundance and if you need something special, butcher is happy to take care of it.

Rwirish 07-10-2021 04:55 AM

Just put some chicken nuggets in the oven.

mike1946 07-10-2021 04:58 AM

Why would anyone throw away most of a chicken ??? or even the carcass which will make wonderful chicken stock for many other soups and stews with none of the other additives that appear on the labels of store bought stocks. The food waste in the USA is shocking and it's about time basic food management i.e. cooking was taught from an early age in schools .. my Mom taught me and it's stood me in good stead for many a long year.

Cut the chicken in half, thickness wise or else it is so tough it can’t be chewed. Because people love the breast meat they have engineered the chickens to have larger breasts so that everybody is happy except the chickens and the people who hate tough chicken.

banjobob 07-10-2021 05:16 AM

Split bone in chicken breast seem to be available at Publix most of the time

newgirl 07-10-2021 05:22 AM

Aldi's always has them.

jack.hunter00@yahoo.com 07-10-2021 05:31 AM

Because the buyer did not purchase. Certain cuts are less popular and and purchasing eliminates waste by not purchasing these items. A case of split breasts weighs around 36-40 pounds with about a 7 day shelf life.

J1ceasar 07-10-2021 05:31 AM

Split

Most supermarkets still have real butchers and I know for sure Publix says to please ask them as they will split packages and do whatever you ask for. Save-A-Lot and Aldi definitely just bring it in from Frozen refrigerator trucks and put it on the shelves. I have never cut up a chicken myself but want to try it as I understand you can cut it in half and put it on the grill that way and it cooks faster.

La lamy 07-10-2021 05:31 AM

OP, I thought you were completely understandable. Sorry I can't give you a store reference, but wanted you to know there always seems to be a crass unwarranted comment on most threads. Cheers.

I have had meat shears forever. It's cheaper to do it yourself and very easy to cut chicken. Simply buy a whole breast and cut it down the breast bone with your shears. It doesn't take a lot of hand strength. Ron

I always see them at Winn Dixie. I find it hard to believe that Publix doesnt have any. I get them all the time

janetgolf2win 07-10-2021 06:44 AM

Try going to Earth Fare in Ocala and speak to a butcher. They should be able to help.

I also use recipes that call for split chicken breasts. I can’t always find them, as they aren’t plentiful, but Publix (Mulberry) has them from time to time. You might ask the butcher at the store to see if they have any in the back that haven’t been brought out to the display case yet.

I am guessing you are referring to my post. It’s easier if you quote the post. Since our chickens came from the coop, we actually used all the chicken, including the head, and feet.
So after 50 years I just buy the parts I want, and don’t have to eat the Named chicken for Sunday dinner. However some in TV would not use a whole chicken, and then make stock. So yes it would be a waste

Have never been a fan of dark meat, and always buy chicken with bone. That way I can make a stock and freeze it.

Take the whole chicken cut down the center remove backbone, leaving the breast side intact. Push down on opened carcass breaking up bone, and flatten out the chicken as much as possible.

I wrap 2 bricks with foil, heat it on the grill, then put chicken on the grill skin side up first with the brick on top. Need a low flame or otherwise you will have a burned outside and not so done inside. Flip over and replace brick.
If I am in a hurry I Sous Vide the entire chicken first, then finish on the grill. But that’s a whole other piece of kitchen equipment most don’t have.

If it doesn’t come out right the first time, it makes excellent stock, and soup. Culinary term for flattened chicken is called spatchcock.

Trader Joe’s has Spatchcock Chickens ready to go in the case, and Butcher in wildwood. Excellent presentation for company, or a fun dinner.

RedChariot 07-10-2021 07:44 AM

OP, I buy them all the time. Publix and Fresh Market. Last week they were on sale at Publix for $1.99 lb. Bought a bunch.

Try the Walmart Neighborhood store at 270 Heald Way, TV FL 32163

I’ve seen ads for The Fresh Market for split breasts (1.99 lb on, I think, Wednesdays) but not sure if the skin is on.

I think more important would be for someone to direct you to an eye exam as I see it all the time all over.

OP is asking for help and your best to offer they are too blind to navigate. Wouldn’t it be nicer to say where there are an abundance of splits, that you have found, instead of attacking the OP.

You must be special, that your feet don’t get wet when you walk on water.

I just use my reciprocating saw. And for the tuff ones my chain saw. Back in early 60s when I worked in grocery store all chickens came hole and butcher used meat band saw or meat clever to chop up at customer’s request. Guess who had to clean and sanitize equipment?

Search YouTube for spatchcocked chicken. It's a little more than just cutting it in half but grills/smokes great. Aldi and Trader Joes and Publix (sometimes) and I am sure others sell already Spatchcocked chicken. Basically you have to remove the backbone.

We have been brainwashed to believe that skinless chicken is healthy. Nothing could be further from the truth!
