Chicken
 
Maybe someone out there my know while you can go to any of our grocery store and find many different cuts of package chicken. For some time now I can't find split chicken breast, all kinds of skinless chicken breast, but none with the bone and skin. I've asked the store, and they got no answer. You ask why I care, I have a couple of recipes that require split breast.

Try "Best Meats" down on Main St in Wildwood. If they don't have it available at will, you should be able to let them know in advance and get it on order.

Chicken processors prepare the product that sells.

Dark meat, for example, is processed for the Latino market as they prefer dark meat. Most dark meat is exported to Latino countries.

Thighs are my favorite part of a chicken. They are flavorful and slide right down. Frequently the breasts are so dry they stick in my throat. I have to eat chicken breast with mashed potatoes and gravy or in a sandwich with lots of mayonnaise to get it down.

I just saw split chicken breast, skin on and bone in at Publix, Lake Deaton Plaza last evening

another option is to go over to Best Meats in Wildwood on 301 and order it

Sadly, people seem to argue about anything. Truth I'm not sure I understand what the original poster has in mind. However, I am certain you can find a video on the internet on how to do it. All the toys people buy and wonder where to store them. A few good sharp knives is all professional cooks use. How to properly sharpen a knife, you do not need a bunch of gadgets for that either. A cheap knife will not be easy to sharpen and it will not hold a good edge. You are far more likely to cut yourself forcing a dull knife or the wrong knife to do what it was not designed to do.

Lots of chicken here is skinless, without bones. Split has skin, rib meat, and bones. Give a more flavorful dish, if cooked properly, moist, tender. Probably the OP doesn’t want a whole chicken, to throw away most of it. Plus whole chickens seem to be not easily accessed, at times, and if they are, very tiny, thus, getting a reasonable size split, might be futile. I am guessing most don’t cook enough to need one. I can bone a chicken in minutes, but won’t use most of it. Our chicken came from the coop, until we moved here.

We pick up our splits from the base. Always in abundance and if you need something special, butcher is happy to take care of it.

Why would anyone throw away most of a chicken ??? or even the carcass which will make wonderful chicken stock for many other soups and stews with none of the other additives that appear on the labels of store bought stocks. The food waste in the USA is shocking and it's about time basic food management i.e. cooking was taught from an early age in schools .. my Mom taught me and it's stood me in good stead for many a long year.

Cut the chicken in half, thickness wise or else it is so tough it can’t be chewed. Because people love the breast meat they have engineered the chickens to have larger breasts so that everybody is happy except the chickens and the people who hate tough chicken.

Because the buyer did not purchase. Certain cuts are less popular and and purchasing eliminates waste by not purchasing these items. A case of split breasts weighs around 36-40 pounds with about a 7 day shelf life.

Most supermarkets still have real butchers and I know for sure Publix says to please ask them as they will split packages and do whatever you ask for. Save-A-Lot and Aldi definitely just bring it in from Frozen refrigerator trucks and put it on the shelves. I have never cut up a chicken myself but want to try it as I understand you can cut it in half and put it on the grill that way and it cooks faster.
