If you are considering the purchase of an electric pressure cooker, I would strongly suggest the Instant Pot or Fagor, as they have a stainless steel interior cooking pot.... the others (aka cheaper) are Teflon coated, and are subject to scratching and peeling.

The Fagor interiors are enamel, but they make a few different models and I don't know if that is true for all of them.
However -- you can never go wrong with stainless.

This thread is interesting to me and I was beginning to feel a sense of urgency. Then I started having flashbacks of a long ago, rather exhausting pursuit of a Cabbage Patch doll.

So I took a deep breath and ordered an Instant Pot cookbook for 12 bucks on Amazon.

Wrapping a cookbook will be easy. I will include a note to say we can go shopping after Christmas — if this thing looks like something that actually will be used.

One question: Can anyone tell me if this newfangled pot would be welcomed by someone who loves kitchen stuff but is perfectly comfortable and successful using an old-fashioned pressure cooker?

I asked the same question..........assuming the user doesn't mind a little technology and a few buttons. Takes a little getting use to, but then :MOJE_whot:

This is more than a pressure cooker. It is also a slow cooker. You can also use it as a sous vide if you get the Ultra, you can saute in it and then go directly to cooking in the same pot. You can make yogurt and breakfasts and desserts. I am making chicken marsala in mine tonight and doing the browning of the chicken in the pot before I pressure cook it. Separately making a pasta with pine nuts, feta cheese and mint, but I could make pasta in the cooker as well, just chose not too.

Making hard boiled eggs take 7 minutes, but they peel So Very EASILY! !!! Probably has something to do with the pressure/hard shell.

Takes about 90 minutes under pressure to make my own beef stock from all the steak bones that I collect in the freezer, and use that for homemade French onion soup. Chicken stock is about the same time too.

I've made several different cheesecakes and even yogurt... rice is a breeze - no watching or have it boiling over.

I was so happy with my 6qt, I got my daughter one last Christmas, and I bought myself an 8 qt on Primeday when it was on sale.
