When we weigh airplanes (where weight and center of gravity is critical), it's done with scales under each wheel. (I've only owned small planes, I have no clue how they weight 747's.)

In the case of using only 1 scale, it seems like Archimedes Principal of Levers would apply. Which I *think* means, ever single wheel would have to be EXACTLY as far of the ground, as the one with the scale under it.
