For baking I use Greek Yogurt, Tofu and applesauce.

I was running low on olive oil and wanted to make carrot muffins. Looked for "oil substitute" and up came mayonnaise. Added benefit, could cut back on the number of eggs. Delicious, and with no taste of the mayo coming through.

We go through a lot of eggs in our house. I am trying to plan ahead a little bit .

Not sure I would trust Amazon with sending an ostrich egg .

I haven't got the patience to boil one - 45 minutes (soft) to 60 minutes (hard)

Even though financially the price of eggs has no effect on me, and I love eggs, I've come to the realization at best I only eat them maybe twice a week.
There are so many food choices in this country.
You know just because most of us were raised looking at eggs as breakfast food nobody will take you to the woodshed if you eat a bowl of pasta instead.
I think I'm going to make myself a ham sandwich.

I have tried most of these from Betty CROCKER and they work well. Mashed banana is the least expensive. The chocolate dump cake at bottom is best dessert ever! Look up dump cakes for more varieties

so eggs are up to 6 bucks or so, thats what 50 cents an egg? do you go out dining or to the bars? a drink beer or what might be 5-8 bucks. its a minimal increase related to your total food and drink expenditures.
now 50 cents, before 30-35 cents, so your cost went up what? 15 cents an egg

I have to agree 100%. I just don’t understand the outrage about the price of eggs. It’s really not a life changing price adjustment. Admittedly I’m in Massachusetts now so not sure how the supply is in Florida. But I haven’t had any issue getting eggs. Egg substitutes are usually very unhealthy, full of garbage ingredients. If not allergic then just use real eggs.

Perhaps the problem is places like the villages. Complaining is a,"sport," Imagine the price of eggs is a problem. The purpose of an egg is to reproduce. Remember, grandma used to crack eggs and put the raw egg in a dish. Fertilized eggs were common. We called them blood spot and you would throw them out. Chicken eggs. There is actually a profession of separating chicks into male and female. Not as easy as it sounds.
Raising chickens, used to be common. Not allowed in the Villages. Businesses. One company is selling a chicken coop with chickens and food for the chickens. There is another you ? Hire a chicken and you get the eggs.

I have to agree 100%. I just don’t understand the outrage about the price of eggs. It’s really not a life changing price adjustment. The "outrage" you mentioned is a natural reaction to a raise in price or difficulty in obtaining whatever we want. For many, if not most, as things become more expensive, that means the possibility of having to adjust one's budget and having to forgo things we used to take for granted. We (most of us) can adapt, but we don't like having to adapt.

What if the chicken I hire decides to transition? Or gets the flu? Or retires to Jamaica? Do I quit getting eggs? Do I have to interview recruit chickens? I don’t think I can handle the stress.
I'm having bagels and cream cheese for breakfast! And coffee.
