What are some good egg substitutes. What kinds of things have you made with them that turned out tasty?

For baking I use Greek Yogurt, Tofu and applesauce.

Eggs are one of the most nutritious foods on the planet. Why would you want to substitute something else??? Are you allergic to eggs?

I was running low on olive oil and wanted to make carrot muffins. Looked for "oil substitute" and up came mayonnaise. Added benefit, could cut back on the number of eggs. Delicious, and with no taste of the mayo coming through.

We go through a lot of eggs in our house. I am trying to plan ahead a little bit .

I haven't got the patience to boil one - 45 minutes (soft) to 60 minutes (hard)

Even though financially the price of eggs has no effect on me, and I love eggs, I've come to the realization at best I only eat them maybe twice a week.
There are so many food choices in this country.
You know just because most of us were raised looking at eggs as breakfast food nobody will take you to the woodshed if you eat a bowl of pasta instead.
I think I'm going to make myself a ham sandwich.
