I have one of those wooden blocks with about 10 knives, but I only use one knife for just about everything I cut. I guess I need a knife lesson.

I have used knifeaid.com
Not inexpensive but I have been very satisfied with the results. Basically, once you pay, they send you prepaid envelope for shipping and they come back in about 10 days. Had some high end kitchen knives that didn’t want to trust just anyone with them

If he is a Cutco rep, he shouldn't be charging to sharpen your knives. It is a free service.

It is a free service if you send the knives to the factory, but you need to pay for "shipping and handling". Their website is not perfectly clear as to whether or not local reps are free, and/or they may be sharpening non-Cutco knives. Looking at the prices for their knives, I won't ever be buying any.
