I'm finally reading "Forks Over Knives" and was surprised to find out what the title really means. I thought it meant that you would use only a fork and not need a knife for cutting meat. But, as I'm sure you know, it means that by eating a vegan diet you will likely be able to avoid the surgeon's knife.

I borrowed the book from The Villages Library, in case anyone is interested. It will be available as soon as I return it.

I saw you at the savannah center in january & i was real impressed. I am trying to follow the diet. I have purchased several books from forks over knives. I find it hard to have to do so much cooking, but i am & freezing small portions since i am cooking for only me. I have a doctor appt in 2 weeks so i am hoping my cholesterol is down. Last september, i was close to having to take pills. Hope to meet you sometime in the future. Sandra

Well, I think it's probably very good for those who like to follow recipes. I have gotten into the habit of just making things up on the spur of the moment. Also, I don't believe in using any kind of flour for baking or making pancakes. That's why I buy Ezekiel bread.

Also, a lot of things they said about the environment may be true but I'm not sure it was a good idea to include that information. For that reason, I thought The China Study was a better book because it stuck to the basic issue of health.

I was walking last year & lost 40 pounds & then last march my husband died so i stopped walking & gained back 30 pounds. I was hoping this diet will help & i have started walking again too. I feel real good. I just hope my numbers will be lower. I will let you know.

I just realized that "My Beef With Meat" is the title of a book. Your link didn't work for me but I did a search of the title. It sounds interesting but being that it's a newly published book, I suppose the library won't have it for at least several months.

I wonder how it compares with The China Study. Anything new since then?

EAT YOUR VEGGIES: In his efforts to promote a plant-based diet, the former firefighter and former triathlete Rip Esselstyn doesn’t lack for enthusiasm —

the chapters in his new book, “My Beef With Meat” (at No. 16 on the advice, how-to and miscellaneous list), include “Vitamin B12: Not a Problem!,” “Chocolate! You Bet!” and “Veggies Give Verve to Your Vulva.”

(Presumably the exclamation point in the last instance is implied.)

Esselstyn recommends a recipe for “handstand burgers,” a spiced bean concoction that doesn’t sound bad so long as you’re expecting falafel instead of chopped sirloin.

Why “handstand”? The recipe comes from Esselstyn’s friend Jeff Novick, a “dynamic, knowledgeable and cuddly man,” Esselstyn writes, “who can do perfect handstands.”

The problem with all this advise is that one size does not fit all. For instance I have a friend who decided to go vagan. He learned that his diet had created severe gastro-intestinal problems and could no longer jog very far from home. He and his family had dinner with mine and me one evening and he admonition us for eating meat. His entire family disagreed and seemed annoyed with him as apparently he was the only one convinced of the vagan lifestyle.

In my American-Italian family we were required to debate religion and politics but you stayed away from the topic of food, receipes, etc because that would defintely get you into trouble.

I believe I am an enlightened individual and to my way of thinking it is all about balance. Since I am now in the last phase of my life and without throwing caution to the wind I will continue to my belief of moderation in all things, do my workouts, keeping my medical appointments and work at smiling more.
