If you have an infrared section on your gas grill, it will do a wonderful job of creating a Pittsburgh style steak.

How do you check your steak to determine quality of "doneness" without cutting into it?

IMO, Palmer Legends. Much better than the FMK-owned Chophouse (even though I find FMK to be very good as well). At Palmer Legends, I get "The Filet Oscar".

The best steak to buy from a store I found was from Publix. You have to ask for "flap" steaks. And I am very fussy when it comes to steaks.

My Weber gets to 700, but I wanted an outside char while keeping the inside rare to medium rare. I now have a second product outside, also gas, called THE BEEFER. Gets up to 1500 degrees.. Steaks done in minutes
