Really easy and interesting salad I had at a potluck recently. You could use it as a dip or as a side. So good.


Frito Corn Salad: 12oz thawed corn kernels, 2c grated cheddar cheese, 1 green pepper diced, 1/2c red onion diced, 1c mayo, 1tbsp taco seasoning, 10 1/4oz bag of fritos (regular or chili cheese) crushed-or omit these and just mix everything and use the fritos for scooping, pepper to taste.
