Default Acorn Squash - Where have you been all my life?

Cut in half, scoop out seeds, stack the halves in a crock-pot with a little water. Other recipes include maple syrup or brown sugar but I think it's sweet already. Acorn squash tastes like sweet potato a little, or maybe pumpkin.
Serve with butter an salt.

Great veggie. And it's my dogs favorite vegetable as well

I cut them in half clean out the seeds, spread butter on the inside and sprinkle brown sugar on the butter. Place in cut side up in microwave safe dish with sides and cover and cook for 10 minutes. Best ever!!!!

I love the crock pot idea. I have always used the microwave. Love it with brown sugar and butter. My mom used to make in in a skillet on the stove. She would cut it up in small pieces, sprinkle it with white sugar, a little water and let it steam, once it is done take the lid off and brown it. Maybe add a little more sugar. So good with butter.

Could they be smashed up like sweet potatoes as a change from regular mashed potatoes?

Cut in half or quarters, remove seeds and excess fibrous strands with a spoon, add sugar substitute to taste, add cinnamon to taste, and a touch of nutmeg. Wrap in saran wrap and cook in microwave. When cooked (soft), add butter while still warm and enjoy.

In place of a sugar substitute, add honey just before serving.

After you scoop out the seeds fill it with broccoli rabe (cooked), cover it in tin foil then throw it in the broiler.
