Default Dinner tonight is...............

Baked Lemon Sole

Serves six
675g (1lb 8oz) lemon sole fillets, skin removed
juice of 1 lemon
150-175ml (5½-6fl oz) double cream
75g (2¾oz) freshly grated Parmesan

Place the sole in a large ovenproof dish (or two medium-sized dishes). The sole fillets should lie in a single layer, not on top of each other.
Season and squeeze on the lemon. Spoon about 2 tbsp double cream over each portion then sprinkle the Parmesan on evenly. It might seem like a small amount but this is a very rich dish.
Heat the grill and put the fish under it (you might have to do this in two batches, depending on the size of your grill). Cook for four to six minutes – thin pieces of sole will be ready in four minutes, while thicker ones may take six. The top should be golden and bubbling.
Serve immediately with little boiled waxy potatoes and green beans.

Sounds like a nice recipe. Is sole a regional fish in your area?
I'll ask our seafood department if they have it "next time I shop".
Will try it, for sure.

I am making a copy cat recipe of Carrabba's Chicken Bryan. Herbed chicken breast with goat cheese, sun dried tomatoes and lemon butter sauce.

Sole is a flat fish. It is a real nice flavour. I have had it it at
Caine Garden a few years back. Very nice indeed!
BUT, mine is better
I could not get fresh today so bought frozen instead. Just as good.

Anyone know a good recipe for mince & potatoes? (A REAL one, not just google, I could do that-LOL)

Haven't had it in years, my Scottish neighbor made it, the only thing I remember is an Oxy (??) cube and chop meat.

It is Oxo cube, but you can use any stock cube. I am going out soon, but will post a recipe for,you later.

Hi Patty 55,
We are home now, and did enjoy our lemon sole!!

Now, mince& onions etc..

Take one pound of good lean 'ground beef' fillet if possible, and fat free.
Brown in a good hot skillet.
In a second pan, brown some sweet onions, your choice how much.
Drain of any fat that may be in the pan.
Make up a pint of good beef stock ( oxo and water, or oxo and vegatble water)
Add this to the mince and onions.
Cook for about 15 minutes
Mix 2 or 3 t spoons of cornflour, to make a nice paste, add a spoonful of stock to this until smooth, then carefully add and mix in to the mince and onion mix.
I then add baby garden peas and diced carrots, simmer until cooked through, about 30 minutes.
We eat with mashed potatoes.
It is what we call nursery food, good, wholesome and tasty.
So,simple. If you want to,be adventurous, add a can of Heinz baked beans, yummy!

Although the chicken turned out exactly like that at Carrabba's, some recipes are best left to the experts. They make it look so easy. I found that this recipe dirtied every pot in the kitchen. Next time I will go to the restaurant and order it.

Looks like a good recipe. Will have to try this.

You can bread it and fry it like flounder with fries and slaw, doesn't get easier than that.

I don't do tilapia but I make this thing with swordfish. You take Rotel tomatoes add equal amount of water, capers and cook it till it's done in the big deep skillet. When the tomatoes are cooked place the tilapia on top, cover it and let it cook for just a few minutes. DO NOT STIR, the fish will fall apart. Serve it over rice.

I like spicy, I usually add cayenne and if I have it some gumbo file to the Rotel.
