This recipe may not be “gourmet” but it always comes out yummy and is easy......
Makes 8 servings which are baked in two (2) 9 x 13 inch baking dishes. 350 degree oven..... CRANBERRY CHICKEN 8 servings 4 pounds skinless, bone-in chicken pieces (breast halves or thighs) 16 oz. can whole cranberry sauce 8 oz. bottle Catalina salad dressing 1 envelope onion soup mix Place chicken in single layer in two well greased 9 x 13 baking pans. In mixing bowl, blend together cranberry sauce, Catalina dressing, onion soup mix Pour over chicken pieces Bake 50 minutes to 60 minutes or until chicken is done ************************************************** Serve with baked potatoes and “CREAMY SPINACH”...... CREAMY SPINACH 9 servings 4 10-oz. pkgs. frozen chopped spinach, thawed and squeezed dry 8 oz. pkg. cream cheese 1 stick (1/2 cup) butter Fine bread crumbs like Progresso Paprika (optional) Place thawed chopped spinach in lightly greased 2-quart baking dish Soften cream cheese and butter in microwave for 1 minute. Beat until combined. Pour over spinach. Sprinkle with bread crumbs and paprika if desired. Heat uncovered in 350 degree oven for 30 minutes. ************************************************** You can nuke the baking potatoes in the microwave..... Very easy but nice dinner......... |
