Aunt Anna's Eggplant Parmesan Casserole / Melanzane alla Parmigiana di Zi'Anna Anna
This is our son’s favorite vegetarian recipe.........he always would teach his newest girlfriend of the moment to prepare it (from my recipe). Maryanne Esposito’s recipe as shown here is as close to mine as I can get without typing up mine............plus this video is GREAT. I dip mine into the egg bath, flour, egg bath and Progresso dried Italian seasoned bread crumbs and then saute in the olive oil........ But it can be done both ways.........my coating stays on. Italians always always always ate their vegetables and prepared them in delicious ways......as did those of Indian heritage....and Orientals as well. Greeks, ditto. Pasta and veggies, rice and veggies.....all good. As mentioned here, eggplant parm is even good COLD. Great leftover, so make a lot. |
