Default How can I punch a hole in an Eggplant slice?

I want to make little eggplant appetizers. I want to cut a 1 1/2" diameter circle out of a 1/4" slice of eggplant. I'll pan fry the little slices in olive oil, add some fire roasted tomato chunks and sprinkle a little mozzarella on top and finish in the broiler.

How can I punch the circles? I could go to a hardware store and buy a copper fitting but would that be safe? Pots are made of copper.

Maybe there is a small can I can buy. A tomato paste can is too big I think.

should do the trick...is tapered down toward the bottom...methinks the opening should approximate the size you want for appetizers.

Fluted or round cookie cutter would be sharper. I think the finer edge would cut eggplant easier. They came in many sizes and I am sure one would be good for your use

A biscuit cutter would work perfectly they come in many sizes usually in a set. For around four dollars or five dollars
