I can not dew the gravy. I want to, but I think the blood-flow will stop.

"Cream gravy", "White gravy", "Milk gravy", "Sawmill gravy", "Country gravy", "Pepper gravy" - whatever you want to call it, that's what my mother made along with fried chicken or fried pork chops when I was growing up. It's still comfort food to me. I never fry chicken or pork chops at home and almost never make mashed potatoes and this kind of gravy. But I do order it on occasion when I'm eating at restaurants that serve it. I think Cody's does and maybe Texas Roadhouse. I know that Cracker Barrel does.

If you eat them frequently. I eschew the butter in this dish and use skim milk. They are no worse than steak with bernaise sauce.

I have a seasoned pan and I rarely use any fat to brown porkchops. High heat and fast will brown them usually.

Yes. THAT WAS A LOT OF BUTTER! A small amount of vegetable oil would work but pork chops usually render fat on high heat. (High enough to brown) Also garlic in high heat gets brown and bitter.

Tasty, I'm sure. But within a couple of hours of enjoying that gravy, a major gall bladder attack is certain for me. Got to be a big "No".

I often wonder now that I have moved to a diverse area where all kinds of foods are eaten, if people would like certain things if they didn't have health issues. Almost all things that are favorites in any part of the country are high in fats. A good Italian sauce has oil or sausages that are high in fat....A delicious steak is laden with fat if it is tender and juicy. Fish are probably the best choice, especially Salmon and Tuna because of their "good" fats but people generally baste fish in butter or fry them in oil.
My real question on this thread is ...do you or DID you like pork chops with cream gravy. Was it part of your diet? Had you ever eaten it? Is it yum or none?
