Food Blogga: Bring Back Sunday Dinner

A wonderful blog by a great blogger with terrific recipes to the right side (hyperlinks).
However, read the main blog first..................she explains it all.
The recipe is at the bottom so keep scrolling downward.



I am vindicated, along with the rest of us who remember it as GRAVY.
Today we may well call it sauce over pasta.........but back then it was GRAVY.
The recipe is for ITALIAN AMERICAN GRAVY..............

Besides the recipe on the hyperlink above by blogger......below is another excellent recipe.......THE GODFATHER'S SPAGHETTI SAUCE to please everyone..........gravy above, sauce below.....:
"Hey, come over here, kid, learn something. You never know, you might have to cook for 20 guys someday. You see, you start out with a little bit of oil. Then you fry some garlic. Then you throw in some tomatoes, tomato paste, you fry it; ya make sure it doesn't stick. You get it to a boil; you shove in all your sausage and your meatballs; heh? And a little bit o' wine. An' a little bit o' sugar; and that's my trick."
That line comes from THE GODFATHER..........

2 TBSP. OLIVE OIL

2 - 4 CLOVES GARLIC, CHOPPED

2 LARGE (28 OZ. CANS TOMATOES, CRUSHED)

1 -10 OZ. or 2 -6 OZ. CANS TOMATO PASTE

4 ITALIAN SAUSAGES, GRILLED AND SLICED

1 LB. COOKED MEATBALLS, using favorite recipe

DRY RED WINE

1/4 CUP SUGAR



1. Heat the olive oil over medium heat in a large pot.

2. Add garlic and cook for a few minutes. Do not let it burn.

3. Add tomatoes and tomato paste (I would do the paste first)

4. Cook for about 5 minutes, stirring continuously so that a relatively smooth consistency is reached.

4. Add sausages and meatballs; Stir until the meat is coated.

5. Add a splash of red wine, then the sugar.

6. Reduce heat to medium low and let simmer for a minimum of 20 minutes, stirring to prevent scorching.

7. Ladle over cooked pasta.

GOODFELLAS MOVIE:

The mobsters use a razor blade (in prison) to cut the garlic so that when it hits the oil it just melts......

i don't think I would argue with either the Godfather or any of those Goodfellas as to what the gravy/sauce is called........

as others have said..........we'd eat it any way, no matter what it's called.............


However, if you can, get San Marzano whole or crushed tomatoes or Contadina also makes a good product.
or grow your own Italian plum tomatoes or Roma tomatoes .........

NOT HEINZ or HUNTS or DELMONTE.......

Since we are supposed to get some snow by Wednesday of this coming week.......I think I'll make a big pot and call it
VERMONT GRAVY SAUCE.
