Are you able to book a tee time on an executive course to allow for just a twosome or will you be automatically paired with another twosome ?

They will pair you with other players, singles or a couple.

Your best bet for playing twosome right now is just before dark, 6pm ish tee time. But can't guarantee it.

Correct if you use the request system. If you want to play as a twosome call the tee time office late in the afternoon before you want to play and ask them if there is an open tee time at the course(s) you want to play and book it that way. Better yet go online to the reservation system just before retiring for the night and set op a tee time. While this method is not guarantee you will only be a twosome it is likely that you will be. Good luck!
