You would need many dehumidifiers to do the same job as the AC would do.

Default Hot water tank

I've noticed only one post has suggested turning the hot water tank off. I have a CYV and I've been putting mine on the lowest setting.
Watter is off on the outside and house is checked every 2 weeks.

The new homes don't have the option of turning down the water heater. You need to flip the circuit breaker for heater. If you have a gas heater, then you set it to "low." Do not put it on the lowest setting -- just put it on low; this is the vacation setting.

Also in a home with an electric water heater, you don't want the heater on, at any setting, with the water turned off. This would instantly burn out the heat elements in the event of a leak.

Turning off the water will protect you from a broken pipe so I think I woud turn it off.
The plugs in the drains and the platic wrap are to prevent the water from evaporating in the pipes and sewer gas getting into the home. Probably not a problem with the A/C on.
I like the circuit breaker idea. Just be sure to keep the A/C and refrigator on.
