Kentucky Hot Brown
Layer the ingredients in oven proof casserole dish or ramekins Toast Turkey Cover generously with Mornay Add tomato slice Two strips of cooked bacon Broil until bubbling hot Heart attack optional Note: Don't tell anyone but I have been known to cheat and use 4 cheese pasta sauce instead of Mornay. Never ever ever use any kind of yellow cheese sauce. The God of Derby will smite you. Also I do love turkey enchildas too. |

My DH favorite is toasted turkey sandwiches. Just make like a toasted cheese but add a thin slab of turkey with a little bit of salt inside with your cheese. I always preheat the turkey in the microwave first.
Also....instead of butter on the outsides brush some flavored olive oil on each side before putting in the frypan. |

My husband loves leftover Turkey cut up into bite sized pieces mixed with leftover gravy. Warm in a sauce pan with salt and pepper to taste and a knob of butter. Then pour over buttered toast!

Tuscan Bean and Turkey Skillet
1 T Olive Oil 1 t basil 2-3 cloves garlic 2-3 cups turkey - cooked and chopped 1 16 oz can diced tomatoes 1/2 c sliced olives 2 16-oz cans Great Northern Beans - rinsed and drained Heal oil in a skillet over medium heat. Add garlic and cook for a minute or two, but don't let it brown. Add remaining ingredients and continue to cook until it's hot and bubbling. Fast, easy, and good.
