Default Ceiling Fan and Lighting Help

We want to make some changes, including putting as much control as possible on the wall instead of pull chains on the fans. Anybody have any recommendations for somebody good to do such work? Possibly including some miscellaneous work on lighting in general?

Our fans are Hunter if that matters.

OP, there are kits available from Lowe's and Home Depot that offer wireless control, these typically fit in the area close to the ceiling. Also, in the same areas of both stores they have replacement wall switches that offer independent control of light and fan speed. NOTE: you will need to check to see if your house was wired with the additional RED wire from the wall switch to the fan, if you have this the wall switches are a good option. I can recommend electrician Robert Gooden, 352-307-6335.
He's done all the ceiling fan and lighting changes we've wanted over the past 3 years. Reasonable pricing and excellent work.

The below listed product works great for what you are looking to do. You can control fan speed, as well as a ceiling fan light (if applicable) I've installed many.

Google this: Lutron MA-LFQHW-WH Maestro Fan Control and Dimmer Kit, White

Amazon and most big box stores carry them.

In the case of red wire in the ceiling box, you cap it off with a wire nut, as it is not used with this controller.
