You send it back and order a different item on the menu. Say why. That simple. You get the server on your side too. Sometimes the manager my comp your new meal or at least charge you the lower of the two prices. This way you give the restaurant a second chance immediately. After that, it would be "I won't ever return!"

Why do I owe them a redo?

I had a situation at Nancy Lopez with a steak I sent back 3x even explaining exactly what they did wrong - it got to the point I pulled out my phone to show the front-of-house how I cooked steak and that their cook had too low a heat.

I shouldn’t have to teach their kitchen staff how to cook food.

We went to Fiesta Grande in Middleton yesterday and really enjoyed our meal! The only problem was the noise level in the main dining room! We ate outside because of the noise level. Botttom line though, Everyone has their own taste and definition of Mexican food! A lot of people think TEX Mex is best! We lived in Texas many years and did enjoy the Mexican restaurants. Fiesta Grande is as good as most. Best Mexican we ever ate was when we lived in Western Nebraska! Large mexican population in the area we lived and many really great small Mexican restaurants! Who would have thought Western Nebraska would have anything but great steaks!

Our oldest roommate born and raised in Mexico. Spent 4 summers with us making dinner 3-4 nights a week. Every meal delish, but not close to what food we had been eating in Mexican restaurants.
Do you want to know what products were in his entree’s, probably not.

I moved to FL from a state known for Mexican food. Have never had good carnitas in FL, nor chile relleno. Including at the restaurant in discussion.

YES, greasy chile relleno, and very little egg, and very little cheese - and not the right kind of cheese. Seems they use shredded from-a-plastic-bag cheddar for everything. Not even sure if they have cheddar in Mexico.
NO, carnitas are not cooked in a pot like stew, and bland. I shake my head and stare at the plate of slop. How can this be so tasteless? Not sure they have a concept of real carnitas.

Unfortunately, this describes virtually - every - restaurant in The Villages.

Mediocre should be considered rock bottom, but here it's aspired to.

I'm not a foodie and I typically do okay in most of the restaurants around the Villages. I have a much bigger heartache with the prices but that's just because I'm such a tight ass. We have been to the colony plaza location on a few occasions and got the plain tostadas and they were very good.

I have had a handful of steaks from the chain restaurants like Texas Roadhouse and Outback that I find very enjoyable especially when they burn the edges and leave the middle raw (and have plenty of salt, pepper and garlic). The steak that we had at the Middleton was genuinely bad, there was almost no flavor like they didn't season it and they did not cook it hot enough to get a sear on it. In addition to the flavor I think a full half of it was either gristle or fat, I know a skirt steak is not a very good cut of meat but I have had much much better.
