Default Calling all Vegans....

I have been invited to a block party in Feb. I would like to bring a nice Vegan salad/dish to share. Where can I purchase a nice prepared salad/dish to share with others? Any ideas? Thank you to all who respond.

Not a vegan myself, however, this should do. You can make it yourself.
No need to purchase anything but the ingredients...........easy to find.

GREEK CAPONATA (appetizer):

Ingredients
  • 1 (14.5-ounce) can diced tomatoes with their juice
  • 2 zucchini, cut into 1-inch rounds
  • 2 summer squash, cut into 1-inch rounds
  • 2 tomatoes, cut into wedges
  • 1 large Japanese eggplant, cut into 1-inch rounds
  • 1 red onion, peeled and cut into 1-inch wedges
  • 1 potato, peeled and cut into 1-inch cubes
  • 3 garlic cloves, minced
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano
  • 4 to 6 slices toasted sourdough bread, optional for main dish
Directions

Preheat the oven to 400 degrees F.

Pour the canned tomatoes into a 3 1/2-quart baking dish and spread to cover the bottom. In a large bowl combine the remaining ingredients (excluding the bread). Toss to coat. Pour the vegetables over the canned tomatoes in an even layer. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake until the edges of the vegetables are golden, about 30 to 40 minutes.

Serve alone as a side, or over toasted sourdough bread for an appetizer "spread"......the guests can spoon their own portion of caponata onto their bread.
French or Italian baguettes can be used in place of the sourdough bread.

TUSCAN BEAN DIP: (Even our vegetarian Indian friends love this)

INGREDIENTS
2 cups cooked white beans (or 2 cans cannelini: I use Progresso white cannelini beans, drained)
3 tbsp olive oil
2 small cloves garlic, thinly sliced
2 small onions, thinly sliced
1 tbsp lemon juice
Sea salt to taste
1 tbsp chopped flat leaf parsley (I like basil)
A drizzle of olive oil(and more for garnish)




PREPARATION: Blender necessary. Cut the baguette into diagonal bite sized portions........
  1. Puree the white beans. At the same time, saute the garlic and onions in 1 tbsp of olive oil until softened and lightly browned.
  2. Add into the blender and puree. Add lemon juice and parsley. Season to taste. Serve on a fresh baguette with a garnish of parsley and a drizzle of olive oil.

Tuscan Orange and Fennel Country Salad
Prep Time: 25 minutes

Total Time: 25 minutes

Yield: 4 servings orange fennel salad

Ingredients:
  • 3-4 Oranges
  • Salt
  • Olive Oil
  • A medium-large fennel bulb
  • Balsamic vinegar
Preparation:

3 or 4 medium sized oranges- peeled and sliced--this really depends on preference.

Salt the oranges and drizzle generously with olive oil. Put aside while you cut the fennel to allow salt to bring out the juices.

Clean and quarter a medium-to-large bulb of fennel and slice it. Toss it with the oranges and season with some more salt, and also pepper at this point.

Drizzle with balsamic vinegar and toss one more time.

Caprese Salad (Insalata Caprese) - How Does She Do It

I realize vegans do not eat mozarella cheese..........but “just in case” they have a few vegetarian friends who do eat dairy............

You cannot go wrong with a caprese salad. Even a child could make one. It usually disappears very quickly, esp. with ripe tomatoes.

Another version, besides layering the mozarella/tomato slice/mozarella slice, etc. with the basil leaves...............in a circular pattern,
is to simply toss small cherry tomatoes with small balls* of mozarella and basil......have the balsamic vinegar on the side.

All these recipes sound wonderful, but I'm still hoping to hear of someplace where you can get prepared vegan.

Go to Thai Ruby speak to May, she should do anything you need, but only speak to her.

Also in Colony plaza 466a Shukura??? not sure of spelling but they have a several dishes

To veganize a Caprese Salad: Substitutes for the mozarella cheese are avocado slices, sliced tofu, and/or sliced jicama.

Not always, but usually, if a menu states vegetarian, it's not vegan. If it's vegan, usually says so. But...Too Jay's might be worth checking out. Could always ask, and they may even be able to make something vegan, if it's not already.
