My Mama always made me a fresh coconut cake. A white cake with freshly grated coconut out of a coconut shell. She put the coconut milk in the cake too and it was so moist and delicious. This year I found coconut cake at a small café in Mount Dora and bought a piece . It was good but just not the same. And, of course, the coconut was not grated.

The new bakery opening in Wildwood will be able to recreate those birthday cakes. Call them and describe to them what your cake was as a child and they can make it again for you.

I always requested and got devil's food cake with white fluffy icing. I've got a birthday coming up in a couple weeks.....just might have to make one for myself!

My first birthday cake was when I was 2 years old. My aunt offered to bring a cake for the occasion. My mother told her it would be best to not put icing on the cake because all the kids at the party would be very young, like me. But my aunt, a sugar addict, just couldn't help herself and brought a cake loaded with icing. My mother gave me a piece of cake and said, "try it, if you don't like the icing I'll take it off." I took one taste and hated it, so my mother removed all the icing. The cake itself was okay (in a weird sort of way).

Never did much like the cake, but butter cream icing is wonderful. Always wanted a "cake" that is just the butter cream icing!
