I'm looking for traditional ricotta cheese for homemade manicotti. I have bought some and it was whipped like a puree. I want the the the traditional chunky homemade style. Anyone know where to buy the good stuff?

Yes but you have to drive to Tampa to get it. Other half makes it when the drive isn’t in the cards

funny, I had the exact same "what the heck is this?' reaction when I opened a container of ricotta last week...we don't use ricotta that often, so I dismissed it thinking to myself that I must be incorrectly comparing it to mascarpone's consistency

To make ricotta all you need is milk and citric acid. See New England Cheesemaking Supply for instructions. You can buy citric acid from them or amazon.

My Italian wife prefers Galbani ricotta which she says is thicker and not runny like PollyO.
She also likes BelGioioso Mozzarella. Both are sold in Publix. |
