Looking for an easy appetizer to bring to a Super Bowl Party on February 2 ????
Below are favorites of the stars...... Actually, both are almost identical and similar to what we all prepare (if we are fans of Guacamole)...... Ryan Seacrest's Las Ventanas al Paraiso Guacamole Serves 4 1 avocado ¼ white onion 1 ripe tomato ½ cilantro bunch 1 jalapeño 2 tbsp. lime juice Salt 1. Cut avocado in half, take out the seed. Get big cubes out of it and mix in bowl 2. Finely chop onion, tomato, cilantro, jalapeño and mix with avocado. 3. Add fresh lime juice. Season with salt and serve with tortilla chips. ----------------------------------------------------------------------------------- Matt Damon's Casa Vega Guacamole 3 avocados, peeled and pitted ½ tsp. salt ½ cup white onion ½ cup diced tomatoes 1 jalapeño, diced Squeeze of lime juice Cilantro, to taste In a large bowl, mash avocados. Add salt and mash until desired consistency. Mix in onion, tomato, jalapeño, lime juice and cilantro. ----------------------------------------------------------------------------------- Avocados are nutrient rich......... Avocados are rich in magnesium. Magnesium is an essential nutrient for healthy bones, the cardiovascular system (particularly in the regulation of blood pressure and cardiac rhythms), prevention of migraines, and prevention of type II diabetes. Ounce for ounce, avocados provide more magnesium than the twenty most commonly eaten fruits, with the banana, kiwi, and strawberry in second, third, and fourth place, respectively. Avocados are also rich in potassium, which is of special interest, because potassium is a critical nutrient that up until now has not gotten deserved attention. Potassium helps regulate blood pressure, and an adequate intake of this mineral can help prevent circulatory diseases, including high blood pressure, stroke, and heart disease. Avocados are also a rich source of folate. One cup of avocado contains 23 percent of the daily value for folate. Various studies have shown a correlation between diets high in folate and a reduced risk of cardiovascular disease and stroke. In addition to their other heart-healthy qualities, avocados are rich in beta-sitosterol, a so-called phytosterol. Along with peanut butter, cashews, almonds, peas, and kidney beans, avocado is one of the best sources of beta-sitosterol from whole foods. A phytosterol is the plant equivalent of cholesterol in animals. Because beta-sitosterol is so similar to cholesterol, it competes for absorption with cholesterol and wins, thus lowering the amounts of cholesterol in our bloodstream. Beta-sitosterol also appears to inhibit excessive cell division, which may play a role in preventing cancer-cell growth. In both animal and laboratory studies, this phytonutrient helps reduce the risk for cancer. |

These were a big hit at the family football party a few weeks ago:
CHICKEN BACON WRAPS Ingredients 1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts) 1 (1-pound) package sliced bacon 2/3 cup firmly packed brown sugar 2 tablespoons chili powder Directions Preheat oven to 350 degrees F. Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp. Mix a can of crabmeat with a bottle of cocktail sauce and pour over a brick of cream cheese. Serve with crackers. Yummy!

Google "hot artichoke dip." There are several easy recipes, the simplest being canned artichokes, mayo, and parmesan ch or mozzarella cheese, either baked or nuked, served with wheat thins or other small cracker.
I've made this and put it in a mini crockpot to keep it warm.

I can do this one as proof of how easy it is and it is DE-LISH!!!!
1- Frozen skyline chili (someone said they saw it at the Wal-Mart off 466) 1- Package of cream cheese 1- 12 oz. package of shredded cheese. Soften the cream cheese and spread over the bottom of small/med casserole dish. Thaw the chili and spread over cream cheese. And finally spread the shredded cheese over that. Bake on 350 for 10-15 minutes. Cheese should be completely melted. YUM!!!! ![]() |
