Default Maybe An Even Better Simple Summer Dish

I almost hijacked Boomer's post on Insalata Caprese - it sounds wonderful, but I had a simple tomato dish for lunch today - maybe the best possible thing you can do with a fresh, sweet tomato. Tomatoes are in-season in Upstate NY too, so I went to the local farmer's stand this morning, and picked up a couple of those fresh from the field, multicolored, strange-shaped beefsteak tomatoes that are not red enough or round enough to be sold at the supermarket. On four slices of good multigrain bread (toasted), I put a little mayonnaise, then a half-inch slice of sweet, incomparable beefsteak tomato. Added a little sea salt and fresh ground pepper, and my sweetie and I were in heaven for a couple of minutes. She showed some restraint, but I couldn't, so I made another. Is there any better way to eat a fresh tomato? It tastes like . . . . . . Summer.

There is nothing better than the fresh bounty from the summer garden. You are makin' my mouth water.
