Default What's North Carolina pork barbecue??

We tried this recipe a few days ago in a slow cooker. http://www.hamiltonbeach.com/recipes...k-barbecue.php

Is there such a thing as "North Carolina" pork barbecue. And if so does this recipe really sound like it is it??

It turned out OK but a bit tangy.

Tal,
Check out this link. Lived there prior to moving to the Villages. The best BBQ anywhere. I realize that is only my opinion but alot of people will agree with me.

Tal,

I was researching BBQ recipes awhile back. There is not just a North Carolina BBQ - there are different versions in the eastern and western parts of the state! I believe to the east there is more of a vinegar base and less tomaot. Hopefully a native Tar Heel can enlighten us.

Default The Absolute Best Pork!

NC Pork BBQ is the absolute best there is,
I love both styles although my special secret sauce is western style which is tomato based,

Maybe I'll bring my cooker when I get to move in a few years and teach ya'll about it, (our northern brethren)

We could do regular cooking's, I can see it now, we'll gather around the cooker with a big cooler of our favorite cold beverages, set it up overlooking the pond behind my house -
and cook up a fine feast, we'll invite our closest 100 or so neighbors -

I wonder if it would look out of place being towed behind the golf cart - it is pretty big,

I had pretty much given up the idea of bringing it with me, but if there is a educational opportunity,,,,,,,
Peace

Default BBQ that is serious

Not far from the Villages is a small town called Douglas Georgia. On October 30 and 31 of this month, the town hosts the Best of the best BBQ competition. If you are serious about the BBQ and want to see, talk, taste the best you will see the top BBQ guys and gals from North America performing their best at this competition.

The people that compete at this event, have to be invited, they must have won many championships within the last year.

Best of all the event is free, you can walk around, smell, talk to the guys that win the top awards in North America.

The web site for this event is
www.nationalbbqfestival.com

Our son Brian Misko with the houseofq from Canada will be competing, he makes his own sauces and his apple butter sauce placed 3rd in North America last year. We will there cheering his group on , then we are off to the Villages.

Sort of sad though as yesterday we lost our best friend Marlene from Cancer, who lived in the Villages. She also went with us to see the BBQ guys and gals compete in Douglas.

Default Thanks for the replies.

I was going to ask a certain Tar Heel about "NC barbecue" at the Doggie Doo Run Run but he seems to be heading to NC yet again.

Eastern NC barbecue. AKA "Pig Pickin'"
http://www.newportpigcooking.com/
Y'all come on down, hear?

http://en.wikipedia.org/wiki/Pig_pickin%27
An Eastern North Carolina baste is usually a very light vinegar based sauce with red pepper flakes, and Western North Carolina barbecue uses sauce with a ketchup base similar to traditional barbecue sauce.
When the cooking is complete, the meat should ideally be tender to the point of falling off of the bone. The meat is then either chopped or pulled into traditional Carolina-style pork barbecue or it is picked off the hog itself by the guests. It is from the latter that the gathering gains its name. The barbecue is most sometimes eaten with hushpuppies (fried cornmeal, occasionally flavored with onions), coleslaw, Baked beans or sometimes Brunswick stew.

Default North Carolina BBQ

My neighbor here in Va. family is from N.Carolina, he has a cast iron smoker back in the woods, uses hickory logs, when done smoking he chops it up into little pieces(Boston Butt) & always adds Vinegar, Vinegar is what makes N.Carolina BBQ different from others.

The National Barbecue Competition in Douglas, Ga., is Nov. 5-6, not Oct. 30-31. I looked at their website. Looks like fun. It's about 3 hours from TV.
