Brown & Brown is in Oxford - they're a seed company but they also have a big market and feature locally sourced produce, dairy, and eggs. |

Different strokes for different folks. I've had eggs that the host went out to his backyard coop and came back with the eggs. Of course we had to say how great they are. BALONEY. As I recall the whites were more runny. You never see them at stores but eggs with two yokes are fairly common. In days of old, you would crack the egg into a dish in case it had a blood-spot-an embryo

Brownwood farmers market farmstand across from the Honey stand has a family selling $5 eggs and I've gotten two yolks in one egg last week. Eggs in Europe do not need refrigeration. I leave their eggs on the counter & do not refrigerate.

As long as eggs have not been washed, they don’t need refrigeration. Washing them takes off mother nature’s protective seal.

Where I got my eggs up north they weren't washed, and not refrigerated. They also weren't "large/medium/jumbo/extra large." They were "a dozen of whatever we got from the chickens within the last couple of days." They had a variety of hens, so the eggs (after washing) might be any of a number of colors/shades/hues. Including the really nifty (but small) blue egg.
She also sold duck eggs, which are big, more yolk to white than chicken eggs, have better nutritional value, and will produce better baked goods as long as you get the proportions right. (If a recipe calls for 3 medium or large eggs, you use 2 duck eggs). |
