I've used both gas and electric for cooking and much prefer gas as you do. I have never ruined food on an electric stove but what I don't like about electric is that the heat is not stopped when you turn off the burner. With gas, as soon as the burner is off so is the heat. That is most important when all burners are being used at the same time and there is no place on the stove to move a pan to. I also much prefer the heat adjustment on a gas stove.

We were here during Irma. I don't recall the power being out in Mallory. I may be wrong but the last power outage I remember was when we lived in NJ during Hurricane Sandy.
